How to make Biltong. Affordably and in the USA.

This video explains how to affordably make biltong if you live in the USA. I specifically chose to use a cut of beef and spices that you can purchase from almost any supermarket or general store.
Making biltong this way is considerably cheaper than buying biltong online or from a local store.
It shows the ways to make your own biltong spices from salt, pepper, and coriander. It also describes which cut of meat to use in the USA and finally how to prepare, cure, and finally dry the biltong.
It is not intended as the definitive guide to making this delicious snack but rather to show an easy way to make it yourself.

    Pure sea salt works better, You can also toast your Coriander for 2-3 minutes on medium heat to really bring out the flavor. Brown sugar also helps a lot with the flavor. With a love for Biltong from SA. Love your video Glen.

    Geat breakdow . I agree with the loasted coriander (cilantro?), maybe grind the pepper corns as well. White pepper also works great and avoid sodium nitrate.

    Great video. I'm an expat from SA living on the east coast (Virginia) where we have a lot of humidity so I'm hanging mine in a biltong box with a fan. I bought pre-made spice mix online, but I want to mix my own, so thanks for showing the mix ratios.

    You are welcome! Try cutting the meat a bit thinner, add some peri peri to the mix and make some chili bites.

    Brilliant video. I’ve built myself a biltong box from a plastic crate, wooden dowels and a computer fan. I used to buy Safari Spice from my local Saffer shop but last time I just used salt and coriander. This specific mix with the measurements is great and I’ll use that next time. I live in Perth, Western Australia and my biltong takes between three and five days to dry depending on time of year. Totsiens en sterkte😊

    Thank you, and I agree on toasting the coriander. I’ve started adding a little bit of nutmeg and cloves to my spice mix recently, and so far so good.

    @@glenbryant1 thinking the old traditional Pickling Spice mix (used for Canning since the beginning of time ;) )) might be a cool 1 shot mix to get that nutmeg and cloves with a few subtle extras and super accessible 🤟

    you really should use non-iodized salt, the iodine they use isnt that good and it will concentrate into the meat

    I haven't tried it that way, So I don't know. But, other than the fact that it would be more expensive, you can certainly give it a try. Let us know how it turns out.

    @@glenbryant1 I would think balsamic vinegar would impart a sweetness that could detract from the spices. I would favor "Malt Vinegar "instead ... (aka brown vinegar, the traditional ingredient)

    Don’t you roast the coriander? I only use balsamic vinegar. Vinegar kills the bacteria and I reuse it a couple of times before I dump it.

    I take the biltong down after 3 - 4 days of drying and freeze any pieces that I want to store in Ziplock bags. I do so to store it safely (as well as hiding it...) and to stop the drying process. Once I'm ready to eat it, I take it out of the ziplocks and let it thaw for a few hours before slicing and eating it.

    Yeah I tried this recipe and the salt content is far too much. I cut the salt in half and it was much better. It was almost too salty to eat.

    You can use Bacon & Chicken. Bacon Biltong is delicious, but go easy on the vinegar and use some Worcestershire sauce for your biltong as well. From SA with love.
