We moved to our 11 acres in 2011 from a large city in the Midwest with zero carpentry and farming skills. We live with no solar / wind power / public water or well.     I'd like to add a word of caution for people who are sulfite, nitrite & nitrate sensitive (as I am)...that leftovers from the winemaking industry could be hazardous to your health. I learned this the hard way & cream of tarter is now on my personal no-fly list! It gave me a headache & constricted airway like I've never had before. I stopped consuming grains a few years ago & follow a ketogenic diet to help regulate blood sugar & food cravings. I was using baking power for my almond flour keto bagel recipe & tried using straight cream of tarter. I can now get the bagels to rise in my oven without any leavening agents by just using a spray bottle filled with water to mist the tops before baking. I now use the jar of cream of tarter to scrub my tile grout with a lemon wedge. It's great for that too!

    This is such good information. I am like you I have just gone to the store and purchased my baking powder and baking soda. I love the idea of making my baking powder myself. Also I never knew how to test it to make sure it was still good.

    Thank you Stacy! I have yet to do this as I had stocked up on a lot of baking powder some time back but have since stocked up on cream of tartar, arrow root, and baking soda so when I run out of the premade stuff, I will start making my own. Some day I need to give you a call again, been forever since we have spoke

    Great information!!! My 8th grade homeschooled daughter uses your channel during her health class.We Look forward to your videos ever day.     Don’t make ahead- mix it up in the recipe. For 1 tsp Baking Powder, add 1/4 tsp soda + 2/4 cream of tartar to your batter or dough. (the missing 1/4 was just starch filler.) Your biscuits will thank you :-)

    Hello Stacy i just learned a lot with you ...i also asked myself these questions..and make the difference between those names mixes us up.. thanks i went into google and saw what was creme tarter..or E336...which is called in chemical name bitarterate of potassium ..it is collected on the inside of a wine barrel when empty..!! Can you imagine it coming from wine process?... so they scrape these crystals of what will be creme tarter...after cleansing grinding etc .. ...why they call it creme...which means it is the very best...of powder risenning ...and tarter..cause it is the deposit of wine....which is called tartrate, really....it has so much uses to it ..like helping the whipped cream to be stabilise..and when whipping white eggs to top a pie ..etc it helps this topping to support the heat of the oven...included all you have already said..they’re are other topics to this powder also..i never had a clue even to look it up ..so thanks Stacy to tease my curiosity......

    I put a quarter tsp cream of tartar in my food and drinks to up my potassium needs. Where do you get that large jar? And thanks for this info. I'm allergic to corn and didn't know about arrow root. Or growing it from cannas.

    Thank you, Stacy! I was was in the middle of making bisquits when I realized there was only half the amount of baking powder in the can as needed 😮 ! Bisquits are in the oven and the gravy is thickening.

    Hi Stacy, Many thanks for all of your info. When my son was about 6yo, we would end the afternoon with the baking soda and vinegar 'experiment' . Science , Physics & fun. We'd put snorkel googles on(eye protection), put a little baking soda in a gallon jug, add vinegar, put the cap on ,setting it on the floor (real quick), and let it rip! That was one clean kitchen floor! lol... Much love..

    Back in grade school, over 40 years ago, I did a geography/science project with some friends where we made a volcano diorama with homemade modeling clay and used baking soda and vinegar for the eruption.

    What you've produced is a good analog to the very first baking powders, called "single-acting" baking powders in modern terms. The "single action" is a fizz of carbon dioxide produced, as you described, by the acid in your mixture neutralizing the base. Modern baking powder, purchased from the store, is almost always "double-acting" baking powder, which produces more gas when the temperature gets to a certain point in the oven. Because your mixture doesn't do this, it will not behave the same as store-bought baking powder, and may not be a good one-for-one substitute. This doesn't mean your baking powder won't work, it just means it won't work quite the same, so be aware the first few times you use it.

    I first found out about baking powder (before then I'd only heard of baking soda because my family didn't bake) when I saw an episode of Arthur where he tries to make chocolate cake. His father gives him some pointers and sends him in for baking powder, and he accidentally grabs baking soda instead. He was sad to see his cake ruined, but to his surprised everyone enjoyed his brownies and didn't even realize it was supposed to be cake!

    I knew there was a difference, but did not know the chemistry differences, or the ingredients in baking powdwer. Also didn't know cream of tartar had anything to do with winemaking. Thanks for the nuggets.

    This is single action baking powder. The stuff you buy in the store also has an ingredient that will cause it to react to heat, the single action that will begin immediately and the second action that takes place in the oven. I learned that from my mother over 50 years ago.

    She also explained which one can replace the other, but not vice versa. Obviously, both are substitutes, as long as there is acid in the recipe, which is explained in the video. If there is no acid, it has to be added. It might be tricky to get the proportions right, though. I like when non-gmo crowd gets some chemistry right but still doesn't grasp the whole picture.

    Less humans handling it. The closer you get to ground one the better. Have you seen the things people do to Products in the factories, completely disgusting. Also if society crashes or decides to oust certain people like CHRISTians without the mark, you'd better already be ready and your children to homestead. Also humans should know how to live from ground up. You never know, it's an extra safety for your and your children to know how to get land and work it and not need any human to do anything unless you want to use they services. Want to use their services not need to use their services.

    I have done this before when in a pinch by mixing baking soda with cream of tar tar, it works without the arrowroot powder, but I have a feeling the arrowroot would give it a better mixture. Thanks Stacy!

    Doug, Lately I've been noticing that when everyone points to a card at the top...there isn't one! Your not the only one this happens to...I haven't seen a card at the top right corner on any videos for about a week or so. Could you also please link in the comments so we can find them? Thank you Sir!!!! :)

    Look for the ( i ) icon at the top right of the screen. When you click that you get a list of what KZread calls "cards" on the video. (These directions for the PC browser client. Mobile clients may hide them elsewhere, but look for the same icon.)

    Mathew, I know about the icon....that's what I am trying to point out....lt's not there! on ANY video I watch who does that! I have not played with my computer settings or my you tube settings which is why I thought there was an issue with "the tube"....thanks for the reply though!

    I can see the "i" and the cards here on my PC. Perhaps there's an issue with your computer or phone? Any other viewers have this issue?

    A teaspoon of Cream of tartar in a about 4-5 oz of Orange Juice is good for cleaning out infections and or fungus in the lungs.

    Is there a shelf life for cream of tartar? Why does baking powder lose effectiveness over time?
