    It is NOT AUTHENTIC!!! We do not use garlic for Pad thai. We use shallot. We do not put green onion , we use chinese chives and you also forget chinese pickled white radish.

    There seems to be alot of haters here. Folks and I know alot of you have not traveled to Thailand or are Thai. There are many versions and is her version. It is very much Authentic. It's just you all are use to eating what we call none Authentic Thai food.

    Trogdor Burninator Thank you I couldn't have said it better. Many famous dishes around the world are in the end nothing more than common ingridients nearby arranged into one dish. Just like there is no one Curry, there is no one Pad Thai it all varies throughout the region. Just let her do her version of Pad Thai and if you don't agree, than change it to the way you like it. Food should be something you enjoy and be happy not create unnecessary hate

    Oh God, the comments...Listen, Pad Thai is a quick eat street dish. You can buy it from vendors that are cooking it right out there for you as you pass by in the market. There's no really one right way to make this dish. I think the mainstays are the noodles, the firm tofu, tamarind, palm sugar, fish sauce and an egg. You can add whatever you want to it and get creative. Some of y'all need to calm down.

    I think people are complaining mostly because of the misleading title which include 'authentic' and, yes, there is nothing wrong with her Pad Thai at all. It just not the ususal Pad Thai and definitely not authentic. I just think that the uploader must have taken the vid from another person and make his own title for some reason. Fyi, Pad Thai was created to compliment the ingredients that only can be found in Thailand(in the olden days), and to promote Thai culture.

    Another reason for parboiling is to leech out as much starch as possible from the carbohydrate rice sticks thus rendering end dish lighter w/out inhibiting the flavour (Sp: World English)... a delightful dish that I shall try cooking myself but wd probably use the fresh rice noodle variety as tasting better no matter how slightly .... wd fry it rather than boil it.. Wd try using fishcake instead of tofu..... hope you can make a fried rice dish. Wok shd properly be seasoned when stir-frying.

    Chuck Heng Oh how dare you! I have eaten buckets full of Pad Thai over my 85 years, and I *KNOW* my beautiful Pad Thai! I have eaten it in the U.S., Canada and France, and am considered a certified expert and a Pad Thai Food Show Judge on this dish for the History Channel... In case you are not aware, here is the definition of Pad Thai: "Pad Thai noun, often capitalized T \ˈpäd-ˈtī, ˈpad-\ : a Thai dish of rice noodles that are stir-fried with other ingredients (such as seafood, chicken, egg, or bean sprouts)". This is a different style I will admit, but it's still a stir fried noodle based dish. Now stop posting silliness, have some noodles, and reflect within.

    Authentic Connecticut pad Thai lol (location credit at end of clip). Only 3.8% Asians there so go figure the limited cuisine exposure. I won't disagree with the flavor profile as it's more or less there, but it's just simply that the rice noodles was done wrong. What people here are getting upset about has to do with her technical fault of not maintaining the texture of the rice noodles. It's frustrating because on one hand she gave the correct tip of using only cold or warm water to soak the noodles, then does a complete 180 by boiling for such an extended period of time. I'm surprised Ms. Trang didn't simply blanch the noodles, just as she would've done for her native Pho. She does have some knife skills and her flavor notes are headed in the right direction though. Credit for that

    It's kind of interesting...one of the first dishes people eat when introduced to thai food is Pad Thai and it, coincidentally, is the a big pain in the butt to make right.

    Looked like porridge to me. I prefer to soak the noodles in hot water for 10 minutes, forget the chicken stock and rather use the wok and heat to soften them.

    I agree. The ingredients are great, but I leave out the broth and let the wok cook the noodles which I've soaked an hour or over night in cold water. No chance of "over wetting" the noodles and making them soggy or clumpy waiting for the broth to evaporate.

    Another thing is to cut out the sugar. It tastes like fried cakes. I was in Thailand this summer and the food was just too sweet. Instead of the sugar and tamarind. Replace with soya sauce and sesame seed oil. I trawled the streets of Bangkok and Kuala Lumpur but the Thai food was just not edible.

    I have pad thai in my frig right now. Left overs from a Thai restaurant I went to yesterday. I would like to try this cook's Pad Thai, but then I am no expert. I am not big on authentic either, I just want my food to taste good. I was in China many years ago and I know it is almost impossible to find authentic Chinese food here in the USA, but I still go to Chinese restaurants once n a while. Most Americans can't cook much of anything (my mother was a fabulous cook), so I enjoy watching some one who seems to know what they are doing. I liked the video..

    Charlie Wilsonon What she did is another way of cooking and there is no rule in doing it. Cooking Pad Thai is not easy for beginner. As I see how see put noodle into the sauce is her way and it is not wrong with that. The reason she cooks egg and tofu seperately fromm noodle is that the egg is not too wet and the tofu stays crunchy, the noodle is absorbed the sauce slowly and not too dried after. However, I agree that she uses too much oil for cooking tofu and eggs. I would suggest using catchup because the color will come out exactly and catup has sugar in it and taste sour as well plus it is easy to find in your kitchen. While cooking noodle you may just add chicken stock and Catchup. You may also add some sugar, fish sauce, and lime juice. The rest of meat is up to what you like.

    It seems like she's trying to "simplify" the sauteeing process for the not-so-savvy chefs by removing the cooked ingredients from the wok. If we were to do it the authentic way, which involves leaving everything in the wok while cooking, it will require slightly more coordination and a watchful eye to prevent overcooking. Why did she drowned the noodles in so much stock...on top of the sauce?? Now that is a different story.
