a few suggestion : - Should not get rid of the onion juice. that helps tenderize/marinate the meat - should not add sumac into the mix. Sumac is for when it's been cooked - no baking soda - the meat is a little too lean - also using direct fire is always preferable to Air Fryer, but this also works nice touch with the fresh and grilled stuff at the end. That's the authentic way.
Don’t you think the tomato and the chili can go in the air fryer after the halftime?

I noticed that your tabei version of this recipe includes saffron water, but this one does not. Is there something specific about the air fryer that prevents you from using the saffron water?

I decided at the last minute not to add the saffron to it for 2 reasons 1. I wanted to make this really simple so someone can make it with ingredients they have, saffron isn’t a staple everyone will always have 2. The saffron would seep out while in the basket as opposed to in a pan, so just didn’t want to waste it
You need that smokey flavour from the coals.

Wouldn't it be better to preheat the air frier and reduce cooking time to avoid overcooking the meat?

I experimented both ways, it didn’t make much of a difference. As long as the mince has decent fat ratio, it won’t dry out
