How to live on £1 a day | Vegan on a budget | DAY 1

This week I thought I would challenge myself and see if I could create healthy vegan meals for five days with only £5! 💸 While I would have loved to have not bought anything wrapped in plastic it wasn't possible with the budget that I had. For some reason food in my local area is cheaper when it's wrapped in plastic! (whyyyyyy?!) I always try my hardest to use as little plastic as possible in my daily life and so this was an exception, but it really highlighted the problems out society have with the amount of unnecessary plastic being used.
This is day 1 of my 5 day challenge, I hope you enjoyed shopping with me and hope that I have inspired you to be a creative in the kitchen and see what you can come up with when you only have very limited ingredients and also that i've showed that Veganism can be as cheap or expensive as you make it.

    What I liked about this £1 a day version was that this lady actually made things - rather than just buying cheap crap. It is not difficult, just that it seems many people lack the knowledge or ability. Well done!

    Where do you find these videos? I live in Canada and all I can find are British videos and the British food costs are so much kinder then here. A single can of beans is 0.88$ at best.

It was just one banana and one cup of oats yes, I would also recommend adding a pinch of cinnamon and vanilla extract if you have them to give it more flavour. I cooked them at 200c for 10-12 minutes (or until they start going brown at the edges.) Hope you enjoy them! 😄

    That's so funny because I absolutely LOVE porridge! I really liked your different ways of using the same ingredients though! A smoothie and cookies. Hmmmm.... I'll have to try those!     I ate far too much of it one time and now it reminds me of being tired and eating stodgy porridge before work 😂 I'm glad you liked the video, the cookies are pretty good although I would add more cinnamon next time for extra flavour and maybe even chocolate chips! I'm so pleased with how well it's doing, I can't believe it! Thank you for all of your support, I appreciate it so much. 😀

    Really interesting - I enjoyed these videos a lot. Also fascinating to find someone else who eats the two meals a day. I've been eating like this for about 15 years and before I always used to feel clogged up with food all day, but now I feel so light.

    Yes I agree! Most days I either eat two meals a day or three smaller meals in a shorter time span, as you said it makes me feel so much lighter and more energetic! 🤗

    hello beautiful! I know this is a lil late to the party (just a year hahahahha woopsie), but I just wanted to say how this was really, really tastefully done. naming no names, ahem... but some people make these types of videos with the best of intentions, and unfortunately they’re just a privilege parade haha. Idk if it’s just because you have the loveliest tone of voice! But it’s fantastic that you used this series to create awareness, particularly when it comes to plastic-wrapped goods - of course, we’d all love to do our bit and avoid these goodies, but many don’t have the means because, as you say, y the supermarkets gotta price up the loose stuff only the good lord knows!!     You are so adorable. Vegan and budget are totally my two things so I love your challenge. I wish porridge oats came in a paper sack like that in the U.S. I don't think I could get as much at my local Aldi for the same amount, but still you bought the same things I would have gotten. I might have substituted potatoes in somewhere. I am totally excited about watching m ore of your videos!!

    Awww! Thanks lovely! I know right, a lot of the time they come wrapped in plastic here too but I was excited when I found these ones in paper. I did miss potatoes and was definitely so bored of eating oats by the end of the challenge, but I did it! 🙈😂❤️

    It was VERY impressive how many different recipes you came up with from the same ingredients. It is much harder to do this sort of challenge as a single person. I might try a similar challenge with the same amount of money per person per day, but do it for me and my 2 five year old girls. Having more money total allows for MUCH greater variety to then divide up between the participant. See you had oats left over at the end, so kind of technically, that value in oats could have been that much in potatoes or another can of tomatoes.

    I ran out of produce and made a similar dinner. Canned tomatoes (fire roasted), canned red kidney beans, and leftover red quinoa. So so good. What really brought it all together was the bbq sauce and spices. Bc spices are key it’s true!

    I wonder if you can get fresh veggies for a good price instead of canned ones? Do you have farmer markets in your area? How about growing your own food in community gardens?

    Thats a great challenge to create awarness for people struggling to have enough to eat every day. I eat oatmeal everyday, so your oatmeal cookie is a good idea to mix it up. Have much oatmeal did you use for one banana? And how long did they have to been in the oven?

    Thank you so much, i'm glad you think so! 😀 I used a cup of oats to medium one banana, they took about 10 minutes in the oven and I flipped them over half way. Make sure you add some cinnamon and other nice things to them too and they will be very yummy! Mine we're a little plain but that was because I lacked ingredients in the challenge. 😂 Hope you enjoy them! 😀

This year marks the 10th year of Live Below The Line so I thought it would be great if some vegan KZreadr's took up the challenge again this year and got involved. I'd love to see a new version of this, see if you'd do anything differently etc?

    I just spent the equivalent of 399 pounds sterling in the US on groceries for our family for two weeks. There’s only three adults here. ☹️👎🏼 zero junk food. That did include laundry detergent but still.

    Eeek, that's so difficult, i've found the same what traveling in the US and other countries. Fresh food is really expensive but sometimes people voulenteer at CSA's or grow their own to reduce the cost

    Wow you got so much food for $5. I usually end up in a fruit and veg shop in one of the shopping centres to avoid all the plastic, its strange that plastic food is cheaper. Can't wait to see how creative you get with this challenge :) :) you should watch The Brothers Green Eats, rendition of there $3 a day version if you haven't already, so creative :) :) good luck :) :)

    I know I was so surprised! My family thought I would go hungry but I was far from it, if anything there was too much food (not that I would have wanted to eat any more rice/oats!) I totally agree, I usually avoid plastic whenever I can when I shop normally, it's frustrating to see single vegetables wrapped in plastic. :( Thanks for the recommendation i'll give him a watch! I love seeing people show that it's easy to eat healthy on a budget. :)

    Wow that's awesome :) so much food = yay leftovers :) and there usually wrapped twice over which is so weird, once there was a zuchinni wrapped up in so much plastic that I'm like yeah no fruit and veg shop it is and hurrah very little plastic..     Wow, it looks like the uk is cheaper food-wise. I live in Australia, and I think even Aldi is more expensive, exchange rate included. What do you think? I'm not sure I could go very far with 1$ a day, or even 9$ (with the exchange rate). Frozen vegetables is sometimes cheaper (but not for onions for example) which is convenient, but I'm trying to be low-waste si I usually avoid them. Although, as I've been unemployed for a little while and have to pay ridiculously high school fees, I might have to go back to that unfortunately.

    Some fruit and veg in Aus is SO expensive! I used to get sooo annoyed at the price of courgette, red capsicum and onions, it's crazy! One thing you could do is wait for the veg to be put on the discount section (or contact a local fruit and veg store and ask to buy their reduced/wasted food each month/week) and then chop it up and freeze it yourself 😀

    Banana Cookies - 1 banana and one cup of oats mashed together (I would add 1tsp vanilla and a sprinkle of cinnamon and a really ripe banana to make them nice and sweet) cook at 200 celsius until golden brown (10-20 minutes) Smoothie - 1 Banana 1-1/2 cup oats, 2 cups water and a dash of cinnamon 😊

    @@Livingthelifeyoulove That smoothie would make a nice breakfast by itself for someone who dosent feel like much in the mornings & Im sure it would be much better for people that those 'breakfast biscuits' they sell which are basically white flour, sugar and probably palm oil. Bet it tastes better than them too! As would the cookies you made. Thats an excellent way to use up over ripe bananas.

    Thank you :) I'm not really sure I just eat pretty dense meals haha. :) I've found that works better for my digestion than eating lots of smaller meals throughout the day, but everybody is different. :)

    She's quite small, she probably only needs maybe 1400 calories a day plus any burnt doing exercise? Fitting that into 2 meals of 700ish calories probably isn't difficult If she was a large man she would have a more difficult time

    @@zoeredadams Those meals she shows are not anywhere near 700 kcals each though. Two bananas-medium small, maybe 190kcal? A few spoonfuls of oats, maybe 250? A couple of tiny carrots 40kcal? A few brocolli florets 40kcal? Half a tin of tomatoes 80kcal? Kidney beans maybe 170kcal? Total= Approx roughly (& I think I was fairly generous) 770kcal for both meals. You are slowly starving!

    Holy shit its a small world Kay!! I was just rewatching a couple of old videos, & I guess I was paying more attention to different things this time around... You were literally around the corner from my childhood home I lived in as a kid (for the couple years we were in England).... I was on Lower Malton Drive, & pretty sure that's the shop that's right near the Scawsby community hall where I went to brownies :-p I literally walked past it everyday on my way to school... Holy moly.... Such a small fricking world :-p Haha, anyway, sorry that was a random comment...     I didn't buy spices for the challenge so instead I charged myself for them appropriately and 1p seemed fine for a pinch of cinnamon. 😊 If I was doing this budget over a long period of time I would factor the cost in and buy the spices but as it was only 5 days it seemed unnecessary.

    Don't forget Canada! $1.70 to a £1 your lucky you have aldi so cheap. Food is way more expensive here.

    Hehe I can't forget about Canada, I would loveeee to go one day! Aldi is a really great place to find cheap food here in the UK. The best place to find cheap fruits and veggies is definitely the markets though. I know as i've travelled around the different countries price of food varies wildly, it's madness!

    My 15 year did the living below the line challenge a few months ago. She had 2 Aussie dollars to spend each day. She's a fussy vegetarian so hardly ate in the 5 days she did the challenge. I think it would be easiest to do the challenge on a vegan diet. After all beans and staples tend to be the cheapest foods.

    That's really lovely that she did the challenge! It's so hard to decide what to buy that works for different meals. Yeah I totally agree, beans/oats/veggies are staples and usually are the cheapest things you can buy. 😊

    @@Livingthelifeyoulove I wonder if mashed up beans & oats would make good rissole/felafal type things? I think it would need a little onion to make it tasty though. The oats would make it all stick together nicely. Maybe the few pence you had left over would have been enough to buy an onion? Might be delicious with the right seasoning. You could have some of those frozen veg with it and maybe some of the tinned tomatoes pureed to make a little sauce? Then one of those banana oat cookies for dessert and hey presto you have a full meal! Not sure if that would all work out within the strict budget though? I think the beans & oats would probably make a complete protein together and all the fibre would make you feel nicely full.

    I show in one of the other videos that it's over 2000 calories and that I ate enough to fuel my body every day. 😊

    If you're going to use spices that you can't afford then you have blown the challenge. Can you go to the supermarket and get a teaspoon of spice for 19p?

    I knew I would eventually get a comment like this. A lot of people who do this challenge don't even include the cost of spices they just say they're not worth costing in so they don't bother. This is more to show people that being vegan can be as cheap as you want to make it, while still being tasty. I included the spices to show how changing spices and adding different flavours can totally change a dish. There's a common misconception that being vegan is expensive, this video was to disprove it.

    Look your video was good. It made me watch it till the end; the content was quality , the challenge made it worth a while. But the spice part, just let it down , because the whole point of the challenge is to live off of £1 a day. And you used a spice which cost about 80p. Sorry to say but your title is misleading. About the other content creators that cheat , shame on them for cheating. Please don't take this in the wrong way. Overall your video has been good. I stumbled across it by mistake and have so far really enjoyed it. I hope to see more from you in the future. I have given you a like on this video so yeah good luck and hope to see you succeed on youtube.

    Thank you for doing this, it was very inspiring and interesting, and I appreciate it being vegan also. I was wondering if you have any plans to do this challenge again? This year marks the 10th year of Live Below The Line so I thought it would be great if some vegan KZreadr's took up the challenge again this year and got involved. I'd love to see a new version of this, see if you'd do anything differently etc?
