    another small tip they taught us in school, since sometimes the alcohol doesnt catch on fire immediately, you can get a spoon or something simmilar, pour your liqour in it and then light it on fire and then simply get the flame to the liquids in the pan

    Alex (or jamie or anyone..) one question. in Asian cooking we often add marinaded beef/chicken/pork/whatever protein to a very hot oiled skillet and it will caught in flame... is it still considered to be flambe? (note: not all marinade have alcohol and as far as i observe, wet ingredients + very very hot oil = insta flames. heck you could even throw water only to ripping hot oiled wok and it will create flame)

    I thought this was about flambee while still having the pan over the fire, and using oil, if it gets hot enough (tilting the pan towards the fire), it ignites.

    Are non stick pans OK for flambe like Teflon coated or something similar? I don't know how high the temperature will be when you flambe so... Someone might know.

    I don’t think they are, you don’t really want to expose nonstick coatings to high heat

    +RankingNumerOne First, try moving the pan back and forth horizontally (remember, not vertically) using some dry beans until you can get the food in the air. Then, try giving the pan a slight (really slight) force by using your wrist when the food is on the opposite side of the pan from you. The latter technique is mostly used when there's too much liquid in your pan. You'll be able to show-off in no time!

    +RankingNumerOne It's basically just tilt, lift, and catch. You tilt the food down to make sure it stays together in the air, and when the food is in the air, you centre the pan under it so it lands in the middle. The tricky part is the lift, as you have to throw the food upwards, and not throw it back towards yourself. Just take it slow.

    I wonder, does it really make a taste difference whether you ignite the booze or not? You might as well just let the alcohol evaporate. The flames don't seem to add anything to the cooking, since they burn well above the pan. Maybe flambé-ing is just for the show? ;-)

    +Paula Bean the fire creates more heat, which probably allows stronger reactions, well basically caramelization. Idk if it's about caramelization for pizza, but pizza would be an example for higher heat = better/different taste. pizza made in a pizza oven at 400+ °C usually tastes better than a pizza made at 180°C , doesn't it?

    +Paula Bean For one, letting the alcohol evaporate means you're keeping the food on heat longer. That affects both taste and texture of what you are cooking.

    Torrey Jones I don't think people "try" to perpetuate this lie, it's just a common food myth that keeps getting thrown around without malicious intent. When people say "the alcohol evaporates", they mean that you will no longer be able to TASTE the burning sensation of the ethanol.

    +Mohammed _ Hazazi your unfunny joke aside (considering how you emphasize Mohamed names), forgo the alcohol. More often than not, flambe is just a gimmick (since alternatively you can flip it for even cooking, or simmer it to reduce and remove alcohol), and anyway, any wet (as in little amount of water/H2O) ingredients in a very very hot oil will catch fire

    Why are people so persistant about this myth that cooking will remove all the alcohol? It simply isn't true, so please stop repeating it. It removes some alcohol, but not much.

    +Novacification 75% of the alcohol remains when you flambe. The flame comes from the alcohol vapors igniting, not the alcohol itself, which still remains in the food.
