How To Fix Broken Mayonnaise The Easiest Way | Chef@Home Hacks

Love sauces? We all do! But the biggest fear of a sauce lover is a broken sauce. Watch this video to learn how Chef Walter fixes broken mayonnaise sauce.
The sauce breaks because the water and oil particles do not mix well and are separated. It becomes runny. An easy way to fix the sauce is to add a tablespoon or two of boiling hot water. If that doesn't work, start by adding another egg yolk in a new bowl. Add some vinegar and water and start whisking. Continue by pouring in some oil while whisking. After the new sauce is ready, start pouring in the split mayonnaise. Whisk it and add more oil if it's too thick.

    Hi Teresa Yes add some mustard too If you want But since it’s a broken Mayo and you already have mustard in the broken batch than you just have to consider how much mustard flavor you have at the end It’s the lecithin in the egg yolk that creates the emulsion Mustard helps but it’s not necessary Hope that helps 😉
