    Fish butchery (at least in terms of creating fillets) is essentially just adjusting to the spine and rib cage of each individual fish. Trying to make a straight object (your knife) cut as cleanly as possible through an angular one (the fish’s skeletal structure) with as little waste as possible.

I want to know what seafood is sustainable in Australia, what fish contain too much mercury so I can avoid giving it to my baby, how to do simple butchery etcetcetc. Some of us are not as lucky to be able to attend culinary school (and went to med school instead! :P )

    A super tasty way to cook fish on the bbq is to leave the fish whole and gutted, put butter, lemon, and herbs in the gut cavity, and wrap it up in aluminum foil. Toss that on the grill at low heat and you got a tasty fish. I wish I could give you precise cooking times, but I usually just check it every few minutes.

    Perfect! Just this morning my friend was wondering whether to filet her sea bass or just bake the whole thing. Now I have sea bass to experiment with! Wish I had a sharp knife though, rather than having to sharpen the knife that I have since I don't think it's good for the knife. Anyone have any pointers on getting an affordable yet decent enough knife?

  • @Dzejens

    @Dzejens

    9 жыл бұрын

    Oh! I do. It kind of depends on what kind of knife you are looking for and what you define as "affordable". But if you are looking for something to cut fish and that is good value for money, you could try a Mac knife like this one: www.macknife.com/kitchen/products-by-style/sushisashimi-knives/46-bsc-85-japanese-series-8fq-sushi-chefs-knife.html. It's sold as a sushi knife, but works great as an all-purpose knife actually. You might say it's expensive, but I would say that it's a good deal considering what you get. Which is a top notch product in my experience. Otherwise I would recommend brands like Icel or Tramontina, which both are good and inexpensive knifes, that doesn't break because you sharpen them multiple times. I've had a couple of knifes in the Icel Onix series and they work great even though they live in a busy kitchen and get a lot of abuse. Hope it helps!

    Any knife needs to be sharpened. Simply buying a new knife when the old one gets dull is a waste. Sharpening it is easy and cheap!

    Dzejens hey thanks for the suggestion. Thing is, I'm a student and I'm not about to invest in something like that until I have my own place. One less thing to pack when I move! Believe me, I wish I had a set of good knives and one of those cuisineart stand mixers!

  • @SkitHertz

    @SkitHertz

    9 жыл бұрын

    xandrios Yeah I use one of those knife sharpeners but the knife that I have doesn't stay sharp for long. There's also the difference between honing and sharpening but I don't think there's much point in honing a cheap knife :/
