    I appreciate your pace and thorough instructions. Don’t give up! (Just a thought, I would be interested to see series of videos, 1)how to fillet a fish, 2)how to cook it, 3&4)couple options for sauce, 5&6)couple options for side dishes. Each with their own video, but at the end of each little series, a complete meal! Just an idea.)

    I know this video is 6 months old, but I seriously want to thank you for putting it together which such clear and detailed instructions. I’ve tried cleaning fish I’ve caught many times using a more American style filleting technique (using a filet knife, and avoiding the rib cage), and I could never get the filets to come off cleanly, and always felt like I wasted a lot of meat. This method with a chef’s knife seems so much less wasteful, and should make it easy to deal with the bones. I’m definitely gonna give this a shot the next time I have a whole fish!
