    @@Jeni_Gough you are very good thank you. just wanted to point out that you did make a point (twice) about how beneficial it is to let them sit for 24 hours after drying. i am not sure but if the air is moist i think that's way too long, unless there is something about potatoes (compared to all other veg) which makes it ok. food starts re-hydrating as soon as its exposed to humid air, and i think its generally recommended to get food off trays, let cool so not hot when into jars. 5-10 to maybe most 20min sitting in un-drying air. then into jars straight away. the only reason for the delay is to get them to cool down. what are your thoughts about this? and what do you advise for things like carrots, peppers, peas, corn? same 24 hour? do you live in a dry place? do you not think it matters so much the humidity?

    I am 76 and as a back up when i cant stand i get a huge box of dehydrated potatoes from all bulk foods . This summer i plan on using your augraten mix in a large slow cooker with kilbasa.

    I have to thank you for this excellent tutorial. I’m not going to dehydrate, going to freeze dry, but the prep should be the same. I’m 68 years old and you have proven you can teach an old dog new tricks.

    @@eyes2see438 the freeze drying came out perfectly. I stored them in mason jars because I knew they wouldn’t last long, as in eating them. They rehydrate great. I made some french fries, grated for home fries and powdered for instant potatoes. What a timesaver.

    In February, I think it was, I canned some potatoes in cubes. Had a bit left so dehydrated them. Paulie loved them too much as a snackie I had to vacuum seal them and put them away 😄 Dehydrated potatoes are good stuff!

    Omg this was the best. I have the same dehydrator I got for Christmas so I will be doing this foe camping trips it’s so much lighter. I’d love to see how you rehydrate and if you can do this with cubed potatoes.🥔⛺️

    I have dried potatoes for a couple years now, I guess either the soaking or the 3 min is what give you that beautiful color. I’m ready to do some more so I’m going to add these steps. I’ve blanched for 1 min, but only soak for 1 hour. These are definitely whiter than mine. Mine are pretty but not like that. Thanks for the great advice

    🤔☝🏻I think that as long as you can temporarily remove the piece of the mandoline that guides the veggies across the blade then you can run tbe veggie acrozs the blade until you get close then use the guide and plunger handle...do this in an assembly line manner, do all you can before you need to put the rest of the mandoline back together😁👍🏻

    Hi Jeni thank you so much for the vid. I bought a huge bag of potatoes from Costco to learn how to dehydrate this past weekend and your vid couldn’t have come at a more perfect time for me!!! I just love your channel and have been watching for about a year now. Your recipes are always so awesome too. Question , where did you purchase your large container that you have your potatoes stored in? ( the one on the left. The one on the right I gave a few already) Is it air tight?     I am going to try this. I don't like potatoes that have been pressure cooked. But when you can get them in season when they are cheaper you want to be able to store them long time. Dehydration seems like a great idea. Keep up the good work. Would sweet potatoes work also?

    Thank you so much for this video. I followed your instructions and successfully dehydrated my first batch and a half of potatoes! LOL - I blanched more slices that would fit on my trays. Was unsure of what to do with the extras but FB group told me to put the already blanched ones back in water but I was not sure. What would you have done? I was undecided for about 2 hours & checked the dehydrator & realized they had decreased in size & I could fit the extras on the trays - whew!

    What kind of potatoes did you use?? The only potatoes I’ve dehydrated so far is a large bag of shredded potatoes I got from the frozen food section at WalMart. Im going to add dehydrated peppers and onions to those potatoes for “ Potatoes O’Brian” Im going to dehydrate regular potatoes the way you did… with the water/lemon juice bath. Looks like another trip to the grocery store!! Thank you for the video’s!! I just found your channel a couple of days ago and have watched several already!!

    Why do you let them sit out for 24 hours after dehydrating? I know you said it assures drying, but I think it would introduce moisture from the air.

    I have this PC mandolin but I don't have the instructions LOL I can't remember how to use it. Great instructions on how to dehydrate potatoes. If you have a link for me to re-learn how to use my mandolin, please let me know. :-)

    Do you absolutely have to peel? I love the skins and I know there are nutrients in it but I don’t know much about dehydrating/canning safety tips yet with potatoes but I’ve got a bunch in the garden I’m about to pull. ☺️ love all of your videos!

    Thank you! You don’t have to peel for dehydrating but you do for canning. The skin holds bacteria. 😊

    I’ve got 20 lbs of spuds for $3.45 so what a deal and I’m not sure do you cook the spuds before there sliced to dehydrate them? I’ve no room for error at this point as prices keep going up. Love your videos 💫💕🌻

    Blanching them works best and keeps them from turning bla k so yes, it is recommended to do so! I use freeze dried cheese powder.

    Yes. Put them in boiling water for 1 minute and remove them. 😊

    You can dehydrate in any dehydrator or even the oven. No fancy equipment needed. 😊

    Same temp for a few hours. After that, let them set for another 24 hours before you put them in a jar. 😊

    What brand is the 8-qt food bucket that you have? I couldn't find it on Costco. Maybe having the brand name will help. (Also checked Walmart) I have a large pot but it's aluminum. Not sure I want my potatoes soaking in aluminum that long! Thanks!

    I have no idea the brand name. I buy them at Costco in no packaging. The brand is not written on the bucket. They sell the same ones at restaurant supply stores and wholesale.
