    If you look up the stats for botulism resulting from home-canned goods, you'll find that there are only about 30 or so cases annually across all 50 states -- most of them being in the Pacific Northwest and Alaska from improperly canned fish. That said, I would recommend that your follow Ball and other guidelines as much as possible. Life is not exempt from taking risks, just do the best you can in mitigating them.

    Question: what is difference in cheese measurement if using freeze dried cheese?

    I’m not real sure since I use powder.maybe double the amount.

    @@Jeni_Gough I'll research..was looking at freeze dried cheese, said one ounce equivalent to 3 ounces of shredded...so thinking less .. (making all your recipes for Christmas presents!)

    Wow Jeni, you got some fantastic deals. We have a farmers market and that’s all around here. But some of the farmers will let you pick remaining vegetables after they pick for a small fee or free. Have a blessed evening!

    Wow, what an interesting service to purchase from and great deals. Was this a year ago or is the date at the beginning just a camera hiccup? Sure wish we had a service or store like that here. Glad you are able to take advantage of those good prices and keep food from going to waste.

    Hi Jeni. I want to use my orange sauce which seems more liquidy than yours, I want to use it with my canned chicken, so I guess I will have to thicken it with corn flour when I warm everything up?

    No, rule of thumb for safe canning is half solids in the jar to half liquid.

    7/30/24 Since the global tech disruption hit I started canning everything possible from my freezer! There were areas in my city that were affected by the tech disruption AND storm damage - all at the same time!

    My husband makes boiled dinner all the time so many people in our area love it that he ends up making it in our big 18 quart roaster so I want to can that for him and he uses little Smokies as the meat and then I make my own vision usually with no meat, but I think I’m going to do a batch and add beans and Beyond steak bits

    If ya get a chance....get a nknja creami!!!!! so much easier I like using yogurt that I make...and adding more probiotics as I make my yogurt.

    ?? Hi Jen, the sauce sounded great and so was the final meal. My question, am I okay with canning the sauce without the clear gel and using acorn starch slurry when cooking? Thanks bunches.

    No, those aren’t something we personally like, so we don not eat them. We use these potato rolls or my basic dinner rolls.

    Thank you for this video. It has been very helpful! If I cook up more hamburger than I can can at one time, & Put it in the fridge. What is the best way to heat it up again without over cooking the beef?
