several years ago i was at the farmers market and one farmer had the most beautiful carrots with more and fresh tops that i have ever seen. I told her i was buying them for the tops, i took them home, dehydrated them and used them all that winter like parsley in some of my veggies casseroles. Of course now I have the chickens who will probably get some of them!
Thanks for showing us how to do this, even us oldies are learning to do food storage. Never too late to learn! Showing how these carrots look after rehydrating them was very good, as many of us have never done any food drying, as a newbie I am very grateful for your excellent method of teaching. You are an excellent teacher.

I use a stainless kitchen sink scrubbie as a perfect minimal carrot cleaner/peeler. It works great with very little carrot waste.

I have 5 lbs. of organic carrots and beets coming in Monday and I plan to dehydrate. So I was glad to see this. On a side note, yesterday I dehydrated precooked (pressure) shredded chicken and then dehydrated at 165°. The shreds seem to dehydrate pretty fast! The problem I have is that the shreds are so crispy they deflate the FoodSaver bags! 😲. I lost numerous bags. I didn't figure it out right away. I had to put the shredded chicken in little brown Duro 2 bags then into FoodSaver bags.

Yep - it's why I don't recommend vacuum bags for dehydrated foods - chicken's not the only thing that will puncture.
Thank you. So happy I found your video. Learnt lots of stuff ... the carrot tops, did not know. RE storage, I started to change over my storage jars from ordinary glass to Miron Glass for extended storage with little or no loss of nutritional value. I mainly store herbs but thinking of venturing into veg and fruit

Excellent video! I enjoyed it. I did carrots and forgot to blanch. I used them and I didn’t have any problem with them. I now blanch them, but if you forget, I really didn’t think it was that bad. Thanks Darcy! I’m going to shred them next

I realized while you were doing the blanch/nonblanch comparison why I don't: most of my family aren't fans of cooked carrots. I have been just drying plain to powder for in mirepoix powder and other veggie powder mixes. It just never "hit" me why I do it that way. Thanks for the shreds idea. I have been wanting to make carrot cake muffin in a mug but prepping carrots in the morning is a pain! Now I know better!

My first bed gave me 3 dehydrators grated carrots and 19 pints! This bed was carrots that didn’t germinate last September so emagine my suprise when February came and I was going out to clean my beds and saw little carrot greens 😁 but my big mistake was not letting my grated carrots to dry on a paper towel 2 it was raining and the moisture in the air didn’t do my dehydrated carrots worth a flip so 3 dehydrators full I had to just dump them as they just didn’t look right. Will try again with this next bed once it’s ready next month and if still rainy with a lot of humidity in air I am just going to slice them and try again.
Great video. The unblanched floated for a bit because they are just taking longer to rehydrate initially.

I don’t understand buying food at the grocery store like shredded carrots and already shredded cabbage to dehydrate. I have a large garden and orchard and I have a need to dehydrate for food storage. But just buying it at the grocery store to dehydrate I don’t get.

Not all of have the ability to have large gardens (apartment dwellers, people in rentals, people with disabilities who can't physically do it). So if we want shelf-stable foods to have in our pantry for lean times, for times of crisis (think 2020 or job loss), or any other reasons, purchasing from the store IS one of our only options - specially if farmer's markets are not available. Sometimes, using frozen foods to store is easier because all the prep work is done (all cutting and blanching). I buy preshredded carrots and cabbage on clearance to stock up because the prep work is done and it's much cheaper.
That cutting machine you use is fantastic, wow you won’t have to use the electric kitchen machine anymore.

Do you know whether dehydrated carrots can be powdered and then used to make flour for pasta? As in spinach pasta. Seems it would be a great way to do this pasta. Never mind!!! You answered my question already. Yay!!

Am wanting to use up my carrots and make them shredded for storage. Do I blanch before shredding?
Thank you, Darcy. I love to follow your channel. I am learning to do long-term food storage with my Cosori dehydrator. For me, blaching is the way to go. Just now, for the first time doing raw carrots. Could you please reiterate how long you set the timer for 6 full trays on the carrots? Temperature is at 125*. For how many hours? Thank you again. :)

I don't set it for done. I set it so that it doesn't go off ;) Don't go by time, go by whether produce is dry. If you want to set it for six hours to remind yourself to check it, or you want to set it for 18 - it doesn't matter. Veg can take anywhere from 4 hours (depending on how you prepped it) to 12-18 hours.

I like to wash, peel, and save the peels in the freezer for making stock. The tops go in the compost.

For baking, yes. For soups and casseroles, no need.
I use my mixer to shed carrots and I don’t blanch before dehydrating

Some vacuum sealers can be used on large mouth jars. Would this be ok for long term storage?

Yes - most can do large and regular mouth with the proper adapters.
What dehydrator would you recommend. My Nesco, round one. Took over a week to dehydrate tomatoes.

It is suggested - specially if you are new to dehydrating. But no, you don't HAVE to. And yes, condition the powder after for best storage.

Then you wouldn't need to peel in the first place. It's up to you do it or not.
Thank you. Question ... How long are the oxygen & moisture absorbers good for when used. I reside in FLA. I have central air but as you know, Fla is quite humid. Thank you.

Until they aren't. There's no 'time frame" If an O2 absorber is exposed to oxygen, it's used up. If a moisture absorber absorbs all it is going to, it's time to recharge it (the color changing variety helps with this a lot). You'll have to look at particular manufacturers' packaging to see what they give as 'shelf-life'.

Do you already blend cooked carrots into your mac n cheese? Then powder will taste the same :) Rehydrate it first and get it to the consistency that you want, and use it the same way you'd do cooked carrots. If you want to sprinkle powder in as a booster, then start small and work your way up until you get to the point you want it.
