    Well clearly you can use the scraps separately for any number of recipes that require shredded potatoes.

    Usually when a chef cuts like this they should be using the extra cuts for something else such as blended soups or compost for use elsewhere

    For the people speaking of 'waste' here, let me just say this: The sides of the potato that the Chef is slicing off are most likely not going to be wasted (in an actual kitchen). They would probably be used in another recipe, like a soup that has potatoes in it, or anything similar. You can always find a use for the 'waste' that is produced from one recipe, and maybe even come up with a recipe that uses your 'waste' from another recipe as an ingredient.

    You have got to be kidding me? So for every potato we buy we only get to use about half of it? I've never seen a chef waste 50% of a product. Surely there must be a better way to do this. I understand about getting a flat stable surface before slicing, that's just you know, gospel. But really there must be a better way. If the plan was to either compost the cut scrap, use them in a cream of potato soup, or shred them into hash browns, it's helpful to say so, so that the viewers don't go all Wiggy. Well we can give him the benefit of the doubt because he didn't say either way what he's going to do with the scraps. But if I ever made a video about cutting a potato like that I would make a comment such as the following ... "Now the extra over here can be used for multiple things, so don't throw it away. You can use it to make stocks, you can put it on a mandolin and shred it into hash browns, if you like some skins in your mashed potatoes you can use it to make that, or it could be added to a rustic roast beef dish. If none of those apply it can be composted."

    I am way late to this but the way the colors of cutting boards _should_ be interpreted is the following: Green - Produce (Veggies, fruits, etc...) White - Dairy Products (Cheeses, etc...) Tan/Brown - Seafood (Fish, Shrimp, Squid, etc...) Yellow - Raw Poultry (Chicken, etc...) Red - Raw meat other than Poultry (Beef, Pork, Venison, etc...) Blue - Cooked Food (self explanatory) I hope that helps, if you have not already discovered what the colors mean.
