Celery root is one of these old vegetables that are currently regaining popularity in a restaurant. You might have seen that round ball at the market wondering what might people do with it and how to prepare it. Follow my guidance and you will be able to safely clean your celery root also called celeriac and get it ready for cooking.
Celery root can be eaten raw in a salad such as celery remoulade. It can also be cooked. To eat cooked, cut into pieces and blanch for 5 minutes in boiling salted water. You can also prepare it as a purée and as a cream soup.
Celery is a great tasting vegetable, it is up to you now to try it.

This root makes the most amazing coleslaw style salad! Simply grate it into a bowl of lemon squeezed water, combine with a lot of mayo, you salad oil of choice made vinaigrette with lemon juice or mild vinegar, season to taste and it's ready. The most wonderful salad ever, it's addictive.

It usually never browns that much when cutting it, so that is not a problem. So lemon is really never neccessary at all.
My celery root is more gnarled than yours. Appreciate knowing the "official" preparation. I usually mistakenly forget to do the lemon.

I just cooked with celeriac for the first time and I looked up this video after eating the dish and now see that I completely messed up the cutting haha, didn't even clean it. Next time I'll be prepared.
You can also slice it thin and use it as a substitute for pasta in lasagna

Cook it in water with some stock (preferabbly from boiling meat 2 hours before) and carrot, leek and parsnip. (cube all root vegetables). This makes a nice vegetable soup!

It seems I peeled mine well, but maybe not. I sauted with onion and rosemary then added vegetable broth and cooked then blended in Vita Mix ...great taste but has little pieces that almost seem like "little fish bones" I can't chew them and in every bite. Do you know what may have happened.? thanks great taste

Yes I believe it is more practical to put several lemons in bowl of water.
