How to Can Spaghetti Sauce
Тәжірибелік нұсқаулар және стиль
It’s sauce time! This is a Midwest version of marinara sauce. Originally from local church cookbooks, the flavors are homey with a little zip. I’ve changed up and added to the recipe to make it even better. Personally, I use this for pasta, pizza, and some soups.

Ingredients:
- 25 lbs tomatoes, weighed then cored and seeded
- 8 cups finely chopped onion
- 4 cups finely chopped fennel bulb
- 2 cups loosely packed basil leaves, finely chopped
- 1 cup loosely packed parsley leaves, finely chopped
- 10 sage leaves, finely chopped
- 2 sprigs oregano, leaves stripped and chopped
- 1 sprig rosemary
- 3 sprigs thyme
- 5 bay leaves
- 1 tsp fennel seed
- 1 tsp anise seed
- 4 tbsp kosher salt
- 12 oz tomato paste
- 1/2 cup bottled lemon juice or citric acid (recommended by the USDA canning guide)
Instructions:
- Make a tomato juice by running the tomatoes through a tomato strainer, juicer attachment, or by peeling them and blending them.
- Add the tomato purée to an extra-large heavy-bottomed kettle.
- Stir in the prepared onion, herbs, fennel, spices, and salt. Bring to a boil, reduce to a low boil, and cook until reduced at least 1/4 or until thick like a sauce, about 2-4 hours.
- Add tomato paste, if using, and cook an additional 5 minutes, ensuring the paste is worked into the sauce.
- Add the bottled lemon juice (or citric acid) and stir to combine.
- Pour prepared sauce into sterilized jars. Fit with lid and ring and process in a water bath. For quarts: 40 minutes, pints: 30 minutes, and 8 ounces: 25 minutes. Adjust for altitude according to the USDA canning guide.
- Remove from the canner and allow to rest for 12 hours.
- Store sealed jars in a dark area.
Yield: 9 quarts
Optional: this recipe can be halved for less output

Your accent gives me life!! I’m a southern gardener girl in the DC area and I miss how warm the people are ( just like you) so your videos are like therapy for me. Thank you so much!! ❤️❤️❤️
I LOVE, LOVE, LOVE your videos!!! I am a single gal who taught myself how to can about 5 years ago from KZread videos! I just discovered yours this year, and they are SO FUN to watch, and very informative! I have watched your salsa canning and green bean canning videos. Thank you! You are a great teacher! :)
I’m so glad I found you! I never had anyone show me how to cook, so I’m self taught. I wanted to make homemade spaghetti sauce, but had no idea how to can! You made this super simple to follow along, love it! Thank you! Definitely my new favorite KZreadr!
i so totally love your enthusiasm! I find myself smiling throughout your videos. What you are presenting has given me so many ideas. Please continue.
I love your enthusiasm and your canning recipes are fantastic!
You’re my new favorite KZreadr!!!!
It is so good to see that this process is still being used. Thank you so much - I really enjoyed watching you. I have been canning since I was about 6 years old. We lived on a farm and always had something to can, I am now 65 and still canning. Thanks.
Iowa here too. Love your recipes. My mom never had a garden or cooked a lot of homemade stuff (only in the winter). I try to cook homemade for my kids and I have a beautiful garden. You make it so easy to do everything and I love your recipes.
I haven’t canned yet but when I do I’m going to watch this again! This is the best canned spaghetti sauce video I have found!! He says You can use a food mill and that’s what I just got. And his recipe sounds wonderful! I like the additional spices because I know that different herbs and spices can really make something taste great! And his personality and the way he explains everything is so refreshing!! This is the first channel I have subscribed to and I can’t wait to watch his other videos!! Terrific job…well done!!
Love the way you present your videos , keep it real , simple ,and flexible for everyone. It sounds weird but it would be so fun to cook with you. I think it would be a blast. Keep up the good work.
I just started preserving/canning and discovered your videos and l must say WOW, how simple it is to follow them and the way you demonstrate what to do and even advise of the processing time. I am in the process of going back to watch all of them. Thank you for sharing.
I love that you're so real. Walk away and cleaned the house. Can't wait to try this (maybe a 1/2 batch first) this summer when the garden is growing again ❤️

You are my go to recipe person!! Love your content!!
I just happened to stumble onto your KZread channel while searching for a rhubarb crumble and had to let know how much I love it. I’ve been “binge “ watching you tonight lol. I’m liking your canning. It reminds me of my mother who canned everything! We lived in the city but my parents originally lived on the farm. Growing up we ate from our garden nightly. My mother made mustard beans. Have you ever made these? If so, please record your recipe. Thanks again for sharing your wonderful recipes. Canada 🇨🇦
Looks delicious! You make it look so easy 😋🍝
You make canning look fun and less scary thank you!!!! ♥️
Keep up the great work Kaleb 💗 thank you
Your the best made my first batch of sauce it pinged music to my ears I was so happy thank you..
Wonderful video, as usual! Glad to see you include anise seeds and fennel seeds. I use them in my sauce to suggest an Italian sausage flavor. 😍

Fresh herbs- so good and easy to grow! I canned tomato sauce last summer, I was surprised how much it cooked down, much better than store bought. And no chemicals, just good food! ❤😊
Ooo, you're the best ever!!! I've shared your videos with my whole family..
We have a tomato press and we send the skins though twice then dehydrate the skins and use them later. Love your recipe mine is very close. Thanks for the great tips.
I have never put rosemary or fennel in my spaghetti sauce, I’ll need to try. I love, love your kitchen. It’s so efficiently beautiful and I would love to cook there.
This is great!! We have something similar called a Squeezo. You can use it inside, or outside on the patio. Which makes it super easy to just hose down the patio! We love all of your videos!
Love, Love, Love this recipe!! ❤️
Please talk more about your compost pile, how you do it? Thank you, love your videos!😍
We live in Florida now, but lived in Muscatine and Dubuque originally. Iowa is the bread basket of the world for a reason!! My wife grew up on a farm just north of Dubuque. Dairy and seed corn. Her parents still have it, though are retired. It is a magical place.
I really look forward to your videos thank you
loved the video. very educational stuff. i followed
Excellent video and instructions thank you ;)
Thank you so much! I’m going to try this!

Hi Wyse, My name is Maria but i am using my husband laptop that is why it is showing William rather. I just found your video and I love this pasta recipe. It is very original and it looks like it would be delicious. No doubt I will make it next week and caned it. Can't wait to taste it. Thank you!
Just found your channel. Making the cranberry cheese log today for Christmas. And can’t wait to do the fig onion pastry…my daughter and I used to get a fig onion pizza every year when she would climb the Space needle to support Fred Hutch. (Seattle speak-lol). Can’t wait to do rhubarb jam. I already have a recipe for rhubarb custard pie. Love your stuff!
Looks great!
Hi. New to your channel. Enjoying binge watching all your videos. Yum 😍 sauce looks rich and flavorful .. surprised to see you didn’t add Garlic though.
I’m a first time canner and made this sauce using a food mill because the Kitchen Aid attachment is out of stock everywhere so I bought a food mill. Lol, it needed more elbow grease but I didn’t mind it. The sauce smelled wonderful, can’t wait to use it with your recipe for Eggplant Parmesan. Of course the eggplants are from my garden.
Loving the shorts!
Just came across your channel & subscribed. Fantastic video! I’m about to water bath can my sphagetti sauce. Thanks for sharing! Blessings!
Love the video , thanks for sharing . xo
I love ❤️ everything you do
I like that you don't use a complicated pressure canner method. This looks much easier. Thank.
Omg….First of all, I LOVE YOUR KITCHEN 😍 Second, awesome video and presentation. I’m so excited to try this. How do I get the recipe? Thank you :))))
Love your kitchen! I do celery and carrots as well as a pinch of sugar, but don't mess with Momma's recipe.
Great recipe….thank you.
Your the best❤️my fears of a first time canner are gone!
I just finished making 33 pints of your salsa recipe. The next batch of ripe tomatoes I want the try your spaghetti sauce, the salsa was delicious.
Although I have my own recipe for spaghetti sauce handed down from my Nanny who was from Italy - I really enjoyed your video. You are fun to watch.

Me too from my nonna.we do it differently..
I really appreciate this video! There aren't many canning recipes that start with milled tomatoes that I've been able to find. It's my preferred method of storing my tomatoes until I'm ready for them. I grow too many to bother with the blanch and peel method. I also never thought to use fennel, so I'm definitely going to do a test batch. Thanks for a great vid! Oh, one question, I know sage can go bitter when canning. Have you ever noticed that in your sauce?
Love this👍
Please make more canning videos 😆 You're the best
That "Arrhhh," referencing January store bought tomatoes!!😂😂 Love that you use your hands. Recipe looks try worthy. And, we could be besties with your personality! 😊
Love it!!!!
I do enjoy your posts! Can you share a link to that attachment your using? We used a manual crank to remove seeds
Thanks Kaleb. I’ve been afraid to try canning but I’ve always wanted to do it. You’ve made it look so easy that now I want to do it for sure. One thing tho. I’m surprised you didn’t add garlic to the sauce. I’m just a garlic-a-holic LOL! ❤️🙏☮️
Can't wait to start canning tomato sauce 💕 thanks for the tips! I am skipping the doing it all by hand this year and pulling out the juicer. Do you happen to have apple butter recipe? Or a recipe that uses just the apple peels? Thanks in advance ☺
Beautiful
Going to try to maybe make half this amount this summer with my mom when she comes to visit
Inspiring!
Love the video! Iowa gardner pride!
Love those pings!
Thanks for your excellent video ! Can you tell me how long one can expect to safely store these bottled sauces in the cupboard ?
I'm thinking about making some homemade sauce. I normally buy Ragu Tomato garlic and onion sauce but your recipe looks like it would taste so much better than store bought sauce. I'm looking forward to making your recipe and thank you for making this video. By the way, did I hear you mention Iowa?
i also add a bit of balsamic vinegar as well to give a bit more depth to the flavor profile when can spaghetti sauce.
I need that attachment!!! Both me and my daughter LOVE spaghetti sauce 😋 but HATE the bigg chunks of tomatoes!!! Also my daughter's super picky about other veggies in the sauce like onions. With this attachment I can sneak onions into the sauce 😋
Canning tomato 🍅 sauce or just tomatoes 🍅 themselves are so delicious! Tomatoes that are home grown from ur own garden is so delicious. There's nothing like them. Store bought is okay but not as good as they are when u do the hard work yourself at home. I watched my grandparents can 4 years! So delicious. We would have Tomatoes and macaroni soup 🍲 so delicious 😋!! My granny always added lemon 🍋 juice to her can tomatoes b4 cleaning the jar top rim itself but you are making sauce. She would can just garden beef steak tomatoes. I believe that's what they are called. 😆 Excuse me if I'm not correct but you get my point. Great job and recipe!
Thanks for the recipe. Can I reheat the sauce and can it tomorrow?
Love you videos, do you have a link to this attachment?
Thank you for this beautiful recipe!! would this work for vodka sauce?
Thanks! Great video! I appreciate your cooking! ! How do you find out USDA canning times ? What does altitude have to do with it and how would I find altitude where I live?
Nice! I'll have to grow more herbs next year! I always thought sugar was to cut acidity of the tomatoes, but I can see where the paste would do the job. Is your scanners All-Clad?

Canner not scanners ):
Thank you 🙏
Your videos are addicting!
I made spaghetti sauce yesterday from all my tomatoes from my garden. I add roasted bell peppers, onions, bell peppers, celery, fresh oregano, salt, garlic, cilantro and tomato paste and a touch of sugar. I add lemon juice then pour my cooked sauce in jars and water bath.

How much lemon juice do you add? Do you put it in the jars or the sauce?
Where did you get those large pots? I love them.
Your a very very naughty and funny guy. Love your cooking videos keep them coming. 🤣😜👍
Thanks for sharing . Can I know for how long these sauces can be kept for ?
