    @@thetattooedbutcher7809 Finished work, went to buy the leg of lamb, and decided to make lamb meatballs. But definitely, will be trying this very soon. Every day I'm eyeing up the legs! Your video will probably get another dozen views in preparation. On that note, being a butcher, I presume you'd recommend a victorinox boning knife? I've been wanting to get a good one for a long time as it's the last knife I'm missing from my own collection. I'm sure there's a cheap one in the kitchen some place, but it wouldn't cut a fart!

    What a lovely video. I really appreciate the fact that you thoroughly explain what you are doing. I have never butterflied a lamb leg and this was easy to follow. I need a different knife though. I only had a santoku knife to work with, which wasn't that bad but it left a lot of met on the bone.

    Hello! Have only cooked lamb once, in a shepherd's pie. I'm now trying a leg for Easter as my son requested lamb and the price wasn't to bad (on sale). Is regular cooking twine adequate? Is there something magical about butcher's twine? Is the leg always removed when cooking a lamb leg? The one I have is "semi-boneless". Thanks for your help!!

    @The Tattooed Butcher When we bought the last shoulder of lamb, the butcher prepared it by releasing the bones but leaving the bones in as we wanted to roast it bone in and then take the bones out. What is that butchery technique called?

    Hey Mate, I'm not to sure if there was a term for it but we just call it marking the bone. Helps the cook time and gets a little bit more flavor into the meat

    if a lamb leg with only femur bone. Is it possible to pull the bone out?

    You would need to tunnel bone it to pull it out, but it wouldn't come out on it's own

    You can tunnel it out. I always hated doing that on legs of pork during sausage season.

    If there's skin on lamb, it may not be lamb.
