How to bake my version of Scalloped Potatoes

In my research on how to make scalloped potatoes I found that there is no classic recipe for this side dish. There are so many possibilities, you are free to do as you like. So I chose to make cheesy Scalloped Potatoes. (Julia Child used Swiss cheese.) These will go well with your holiday or Sunday roast. They are easy and they taste as good as they look. This is the third of three potato side dish videos I planned for the coming holidays.

I have been looking for a good recipe to Scalloped Potatoes. Thanks, this is what I want.
We only ever got scalloped potatoes on special occasions like Christmas or Easter (and always accompanied by ham, coleslaw, and homemade baked beans). As kids we would crowd around the oven door, drooling, so impatient for dinner. Mom always made them the same way - a layer of potatoes, dot with butter, sprinkle over a tablespoon or so of flour. Repeat until the dish is full. Pour in milk until you can just see it. Bake at 350 for an hour or so - test with a fork after an hour. Line the cookie sheet under your casserole dish with foil because the milk ALWAYS boils over. BEST scalloped potatoes EVER. I can't decide if I love them so much because of how wonderful they taste or because of the oh so happy memories associated with them.

Those sound like some wonderful memories. You remind me of waiting for Mom's custard pie to come out of the oven at Christmas. Thanks for some fond memories.-Dennis
I made this dish last night. I made enough to give two neighbors a dish also. It was the best scalloped potatoes I’ve ever made. I did put thyme and chunks of ham in mine to make it a meal with added veggies. I uncovered it after an hour to brown the top, but it required 2 hours to bake. Thank you for sharing.

I just bumped into your recipes today. I very much liked your scalloped potato dish. It's the best, I'm sure. I grew up with my Mum's version, very stripped down. She just peeled and sliced about 8 idaho bakers, dotted some butter in a dish, arranged the potatoes all around, and added one whole can of evaporated milk, salt and pepper, bake and serve. Yours is better! Thanks a lot!

Thanks, Dennis. To be fair to mandolins... the plastic hand protector is a boon but IMHO is too unwieldy for a whole 'spud'. For the first 3/4 I hold it in a gardening glove and cut away, swapping to the holder for the last half inch only, to protect my ancient digits! The mandolin flies along that way. It's so good for onions and jumbo garlic, too, cut super thin before a low, slow oven drying, then ground to make onion or garlic powder for rubs, etc.. Much better than store bought.

I love how you arranged your potatoes on top & how brown & crispy the top looks. I think scalloped potatoes need that textural contrast. Also I think you sliced your potatoes to the perfect thickness. Often folks don't cut theirs thin enough.

That is pretty well how I make them. I learned how to make them back in the 1980's from a cookbook I have called More Food that Really Schmecks, written by a woman called Edna Staebler who lived among the Amish in the Kitchener/Waterloo area of Ontario. But also learned bechemel with grated cheese in grade 7 home economics way back when we were learning how to make mac n cheese. Oh something I made a few days back with some frozen cauliflower that I blanched and froze about a month ago. Pour that cheese sauce over blanched cauliflower and sprinkle a little bread or cracker crumbs on top and bake. YUM YUM. Very important to learn bechemel as there is a number of things you can do with it.

I love the idea of scalloped potatoes being so popular that there are literally dozens, if not hundreds, of variations. I looked up that book. It's available used on Amazon. I might get a copy. Thanks for the info.-Dennis

She also wrote Food that Really Schmecks, you may want to get that one to. I don't have that one. I have collected a few cookbooks over the years. The More Food that Really Schmecks was the first book I owned. My prize possession is a book that belonged to my mother, that my sister has got my mother's copy and I found a copy at a yard sale. It is called The Modern Family Cookbook by Meta Givens. It has some really old recipes in it and is an interesting read.

This looks so good! I used to have a mandoline, but had to get rid of it due to being clumsy!! I found a great little kitchen gadget. Have you ever heard of a Feemster's Slicer? They are amazing. They cut any size perfectly and are easy to clean. Also small enough to fit anywhere. I just love mine. I think I paid $7-8 for mine.

That's a neat looking little slicer. I found it on Amazon and it isn't expensive, and it's small enough to store easily - an advantage in a mobile home. I might get me one of those. Thanks for the information.-Dennis

I've had mine for years, and it is as sharp as when it was new. The blade is carbon steel, so I dry it well after each use, but other than that, no care! I hope you get one!
Always getting me hungry in the evening time, Dennis! No food for me this late haha. Didn't know you could get the rue so thick before putting it in there. Will have to use some your version to add on to mine very soon!

I like your name, "Angry Canadian," makes me smile. I've seen some variation in the roux formula, some using less flour to butter in the ratio. I'm not sure which is best. Whatever works, I guess.

That casserole is Gorgous!
Great dish for using up leftover meat and or odd bits of cheese from the freezer, my grandmother taught me to make it. Hers was more saucey and always had crumbled crispy bacon added (gramps loved his bacon) to the cheese sauce, with added leftover meat it was a main not a side. Thanks for the video and the fond memories it brought back. Take care god bless.

That particular model is old and no longer available, but if you search for "electric slicer" on Amazon you'll see several models. I hope that helps. -Dennis
I do have a fancy kitchen but LOVE that you prove that you dont need one! :) One thing, I was fascinated by the rotary slicer but you didnt show how it works? :/ ps where is your mobile home located?

Alas, it was made by a local artisan. There is a flaw on the underside, thus I bought it at a very low price. One of a kind.
I'm a pro at scalloped potatos.. One time I had no milk but was already in the process of making it. I used chicken brother and I couldn't even notice a difference lol.

This sounds like a good idea. You could do a standard Shepherd's Pie recipe (I have a Welsh Shepherd's Pie recipe here: kzread.info/dash/bejne/anh5lLZul8anc6w.html), but rather than using mashed potatoes on top you could arrange potato slices in a scalloped pattern. Bake it long enough to cook the potatoes. I might try this. Thanks. -Dennis

Lack of "scalloped" potatoes recipes is true but.. I found the "escalloped" spelling in some very old cookbooks. When I was a girl they were, in fact, referred to as escalloped potatoes. Any way you call them, I love em. Au gratin in French dictionary is light brown crust of bread crumbs and cheese over.
Sometimes when I make sauce like that the cheddar just clumps up into a rubbery ball, any Idea what causes this?

Yes. You might be stirring it too much. Try stirring just long enough for the cheese to melt and blend in. Also, do this off the heat. The flame under a pot can heat the cheese too much and cause it to stick and become stringy. I hope that helps.-Dennis

Oh wow! I just found you by typing in "scalloped potatoes" in the search box. I never heard of your channel before right now but I live fulltime in a Class C motorhome. Thanks Jeanne. These pieces were handmade my a local artisan. I look for these one-of-a-kind pieces because they look so good in my videos. The local university has ceramics classes and once a year they offer student project pieces. They are very inexpensive and sometimes they give them away for free. -Dennis

In County Durham England it's just sliced potato sliced onion tons of and whole milk. Got to admit it sometimes cuddles but what the hell it's still my last meal wish . No cheese please.. Its sometimes called freckled potatoes.
Simple and straight to the point. Love it.
Added the right amount of butter, flour and milk yet the sauce hasn't thickened before i added the cheese. Is there something i missed?

When potatoes are cut they start to turn brown (oxidize). That would ruin the appearance of your dish. It might be better to assemble and bake in advance, then reheat the following day. I hope that helps. -Dennis

Dennis- Thanks for clearing up the definition of scalloped potatoes. My Mom taught me that scalloped potatoes was with ham, and potatoes with cheese was Au gratin potatoes. So it is scalloped potatoes due to arrangements of potatoes. Not scalloped because she (mom) just put the ham in it. The corrected way is scalloped potatoes and ham. Or scalloped potatoes without ham.

You and me both. For most of my life I thought potatoes au gratin was potatoes with cheese sauce. I like the idea of the ham. In one of Julia Child's TV shows she made a scalloped potatoes main dish by including cut up sausage. One of my future projects is to use linguiça. I just need to figure out a sauce. Nothing comes to mind yet.-Dennis

I had that same misconception for many years, decades actually. I learned only recently that "au gratin" simply means "browned on top." Cheese and/or breadcrumbs can be sprinkled on top and browned, and that would be au gratin too. Thanks for comment. -Dennis

Scalloped potatoes is simply an Americanism for potatoes Gratin... you will find plenty of recipes for this ancient style.
