    Agree-the FREQUENCY and the quality of videos of late has been amazing. I get upset when i don't notice a new video within the HOUR... Going to try that salad for sure-we grill 5-6times/week now until like October when the snow sets in and it drops to 2x / week... never done a salad like that but we make our own bacon on 7kg or so batches so that grilled pork belly is a definite HELL YA... Can say enough good about the current last bit formats... really like them-more laid back and love in your kitchen or out at the BBQ patio... it really speaks to me trying even MORE of those things you whip up. Hats off to both of you!!

    I like this dish. In Australia, mangoes are often used as well as apricots or apples in combination with pork. You cant go wrong with peaches though. Great compliment with pork

    Internal temp looks a bit high at 86C but I'm sure it tastes great. My tip for crackling if it doesn't come out crispy is to cut it off the meat and bang it in the microwave for a minute of two.

    BBQ fruit is also a great dessert. Remove to a bowl with lemon juice and sugar. Cover, and after a few minutes they’ll have created their own sauce. A dollop of cream or ice cream and you’re done

    BBQ tip. Do not rub the the dry rub in to the meat. put the rub in a shaker with big holes and hold up high and spread the rub evenly on all sides the pat the rub in....again, do not rub it in. When you rub it in, it doesn't spread evenly across the meat and your left with rub blotches every where.

    @@AuntieLiz celcius was settled upon in 1948 as the official unit of measurement. Centigrade is the same scale as it's the name of the other inventor (so to speak) but celcius is the accepted term.

    I am sceptical that she could achieve an even roast on the pork skin using her inclined angle cooking method. The edge nearest the heat is going to char first.

    Really gotta make sure that heat-coals are away from the side of the pork + a controlled/hot heat but not too much flame

    Why not pour boiling water over the skin, then cut slices in the meat and add spices then let it sit uncovered in the fridge for 24 hrs?

    When handling meats such as chicken or pork, it's vital to wash your hands before handling other items such as jars, pans, handles and so forth. The channel creator knows full well about handling these meats and many other foodstuffs, and is someone who is influential at teaching cooking skills. Hygiene should be part of those cooking skills. If everyone was aware of these hygiene issues, food poisoning wouldn't be such a problem, especially during the BBQ season.
