Meanwhile most the people complaining eat processed meats from grocery stores while having a poodle from a puppy mill. This is farming and there's no difference from their cheeseburger except price and pallets.

I’m actually glad that a place like the exist with high quality standards and uses the whole fish and not just the eggs. There are places that will just kill the fish for the eggs and throw the rest away which is a total waste with no quality control. Like others have said this kind of place is great as it doesn’t wipe a whole species of fish out as they are captive fish they use and wait till the fish itself is ready to be harvested instead of just snatching it up at the first sign of roe.

If there was a way to harvest without killing, while still keeping quality standards up, don’t you think they’d do that? Obviously they’d rather not have to kill them and be continuously raising replacements for 7 years. Just from a cost perspective that doesn’t make sense if there was a good alternative. Farms like this are what will ensure the species survival when human eventually wipe them out in the wild. These farms could one day help restore wild populations if humans ever wise up.

There's a fellow named PaulB who has had much better success at keeping marine fish than most people. He's of the belief that fish are healthiest and in their most natural state when they are in breeding condition, therefore that should always be the goal, but it can be hard to achieve. These fish have to be very comfortable to produce the products you are making. Good on you.

I've read sturgeon meat is best smoked. And given the meat is still very much the side product, it shouldn't be that expensive, especially if you live somewhere that has these caviar growers nearby. I live in eastern Finland, one small town south of us grows caviar. Just telling the owner of any grocery store that sells fresh fish that you would like some sturgeon meat and they get it for next day, price per kilogram not being a whole lot.
