Honestly, both breads look quite similar. Including the softness. And chunks of bananas are not а big deal. But I am totally with YOU for the right way to mix - respect for the right process. I just can see people piling up the ingredients in the order of appearance. GREAT VIDEO 👍🙏♥️🌿
It's amazing how something so seemingly easy as banana bread can go wrong. I've made plenty of door-stops over the years. 🙄 But now have my favorite recipe that turns out great every time. That "what not to do" loaf would make fantastic banana French toast! 😋 Thanks Gemma! 🥰

I don't mix my dry ingredients together first but after putting each dry ingredient into the wet mixture I mix it together before adding the next. I've never had a problem baking this way and it does save on washing up 😉

I don't bake much, but I've taken the concept of mixing dry ingredients before adding to the wet for my daily vitamin/ supplement stuff. My drink powder of choice has some granulated emulsifiers already in it, but I also add a heaping teaspoon of cinnamon & turmeric to it, both of which love to clump in liquid, so mixing them with the drink powder really reduces that so much.

For the longest time my banana bread kept turning into bricks after a few days 😂 still never figured out what went wrong. Later I used a different recipe and it finally held up and stayed soft and moist

I always use frozen banana puree which results in a more flavorful loaf.

That's an interesting idea and convenient. Do you make your own frozen puree? I've never noticed bananas puree in the frozen food section. I wait until the bananas are almost all black. They can then be Pureed with a spoon and are very sweet and flavorful. I can now imagine freezing some black bananas in individual containers. Pureed and ready to go. One container per loaf. Thanks for the idea.

@@tmcche7881 Yes, I freeze my own puree when I have excess bananas. I package it in 1 cup containers and it thaws very quickly. They naturally darken in the freezer which results in a darker loaf. Often you can buy overripe bananas at the grocery stores for a discounted price.

I loved this! Banana bread is my go-to recipe to bake, but I often make those classic mistakes! I noticed in the "correct" method that after the light mixing there still seemed to be some clumps of flour. Is that okay? Will you taste those clumps after it bakes?

You can use mix until it comes together. A few small lumps would be ok, it will blend together when baked.

Your banana bread has always helped me when I have to bring something to a get together or even to sell, but man! Thanks to this I noticed that I am over mixing! Will have to try with a fork instead of a trusty spatula

Never had an issue not using parchment paper and only butter. Comes out easy after cooling

Thank you SO much for this! This is super helpful! If you wanted to make chocolate banana bread with cacao powder and chocolate chips, do you have any recommendations for what not to do?

You can remove 1/2 cup of flour, replace with cocoa powder in the same amount. Then just add the chocolate chips after the batter has come together. Hope this helps.

Mine is a little but dense. I dont know if i over mix it. I put flour and buttermilk alternately Maybe it is better if i put the milk first and throw the flour at one time only. I also use wire wisk to mix it. So it is better to use fork.

Yes, it's alright to have a some small lumps in the batter. Not large ones of course. And yes, overmixing can result in a dense bread or cake. Hope this helps.

Hi. The default setting in most of my recipes is that of a conventional oven; placing the baking tray in the middle rack and using bottom heating only. Hope this helps.

How do I bake it evenly? The center always seems a little under-baked, but if I leave in oven longer then the edges over-bake :( I'm using glass pan, does that make a difference?
Do I turn on the top heat in the oven? Or do I just use the bottom one?
Hi Gemma, loved the video. When I make my banana bread I add a tsp of banana liqueur and I use buttermilk instead of regular milk. I get rave reviews on the bread , but I am curious to know what you think of these substitutes.

They are great for added flavor or enriching your bread. If it works for you, then you should carry on baking with those.

Hey Gemma, saying hello all the way from the philippines. I want to know when mixing the batter with a fork, will it be ok to have a few unmixed flour or it is crucial to make sure that all dry ing is mixed with the wet?

Mix gently until the batter just comes together. A few lumps will be alright, but not too much as that would mean it’s not evenly distributed.

Am I supposed to let the banana bread cool entirely in the pan or are you supposed to tip it out and let it cool after? I always question what to do. Love all these tips!

Gemma I have dried blue berries.can I use them in cakes by soaking in the water or how to use dried blue berries.

Hi Sumithra. You can soak the berries in hot water for around 5 minutes, then drain the water off it. Make sure it’s completely drained so it does not turn soggy when added to batter and baked.
I love videos that show what not to do, cuz sometimes I think I did everything right and only when I see what not to do I'm like "oh I did that, that's why"

Is it ok to puree the bananas instead of mash them ? . I have been doing it like this for a while but i was not sure if it would be better to just use a fork. Would you get better results with a fork or a food processor ?.

I had banana cake, not banana bread 😕 So bananas with some black will enhance the flavour of the banana bread? If so, I think it's the same as using stale bread for French toast. How abt completely black bananas? Can I use them?

Hi Jason. It should be good for as long as the banana, when peeled, is not rotten inside.
I hope i will get an answer - 1 hour after my banana bread cooled down, it was full of small green spots inside - i read it's some chemical reaction but is it still safe to eat?

I used to get upset with my family for not eating bananas once they went brown. Then I found a great banana bread recipe. I would guard the bananas as they started turning brown - because then they were perfect!

i put my bananas through a potato ricer yesterday thinking it would mash them better than i could with a fork, and be faster and easier. but it actually basically liquified them beyond the usual desired texture and i ended up with a very wet bread even after over baking the outside of the loaf

Mashing them in a potato ricer would make it more moist, as a result you probably used more bananas than needed. Or it could be the flour. Flours do not absorb liquids / wet ingredients the same way; it may need more or less liquids than the amounts indicated in the recipe. Hold back on the wet ingredients when combining wet to dry ingredients. Gradually add the liquids and stop when the batter or the dough reaches the same consistency as shown in the video or as described in the recipe. Hope this helps.

I don’t know what I am doing wrong but I find my cakes and breads don’t cook in the middle. I do check with a tooth pick and it looks done but when I cut in to it, it is still doughy. I am in Calgary so at a higher altitude. Does that have something to do with it and what should I do to stop this happening? Thanks

Hi Gemma ! I need your help. Every time I try to make banana bread there is always a gummy layer on the bottom ! Is it underbaking ?

Yes, that is possible. But I suspect it’s more a case of overmixing, which over develops the gluten, giving it a rubber-like consistency.
Why butter if you’re adding parchment paper? Doesn’t that negate the butter on the pan?

It helps the paper stick, adds heat when baking.

I LOVE this, great idea!! I’ve often followed recipes and got some of the techniques wrong so it’s incredibly helpful to see the results of common mistakes. By the way, I’ve made your banana bread and it turned out beautifully from the first time so I do recommend it to anyone.

I did the wrong one just a few days ago. It was veery liquidy and I burnt it. Now I have to redeem myself by making it better tomorrow!

I have a coworker that never cooks her banana bread long enough and it’s always just a bit raw in the middle. Not sure if it’s her oven or she doesn’t read directions well or both.

It just needed a little more time in the oven. It does tend to happen to banana breads because of it’s high moisture content.
Hey I baked this recipe but my top of banana bread is nice and brown in colour but side is whitesh unlike yours ...yours is beautiful brown...what could be the reason..?

It’s most likely the baking pan. Some baking pans are good heat conductors, producing an even brown bread.
I made bread and it is perfect temp of 205° but there’s bits of wet banana. Is it safe to eat? It looks great except those little clumps of bananas 😢 help

I think it would be. Shelf life might be shorter though.
How would you bake these if you just wanted to make muffins?
So I made this it baked well, however it doesn't take like banana bread should. I never can make it taste like that but my husband can. The bread when cooking smelled very good but taste not like banana bread but edible so i will eat it. My bananas were ripe and frozen so I don't understand. PLEASE HELP!

You can add more bananas to get more flavor from the fruit. Hope this helps.
