    That particular company's gimmick is that they age their sauce in smoked barrels, giving an added flavor to it. It's not something you'd see in traditional soy sauce.

    Wood is not an ingredient in food. Cellulose is nothing but a long chain of monosacharides. It's fibre. Like grass, any roots, skin of fruit, etc. Wood does contain some cellulose, but the reason it's harder than a daisy is because of it's structure in combination with the fact that it's also parly made up of lignin.

    The machine at 4:25 in this video is most certainly a rinsing machine. The machine is designed to carefully rinse the bottle with soy sauce, thus making it a rinsing machine. If this were a filling machine, it would have filled the bottle instead of rinsing it.
