I just returned from Stellenbosch South Africa with a solid week of wineries, and yet the surprise highlight of my time there was a tour of Van Ryn brandy distillery, learnt so much ! 20 years of ageing in oak barrels !

@@drinkdestinations yeh, we passed on groot... but did most of the other ones... but back to that tour of Van Ryn brandy... I was filming the whole tour but they made us leave all our cameras and mobile phones and electronics outside as this whole dark room that was filled with oak barrels of 10-20 years old 78% alcohol could possibly blow the place sky high. (highly unlikely, but I guess it's possible since you could smell it in the air !)

Neven, is working on opening up his distillery in Croatia now. Truly an inspiration to me and many out there. I’ve talked to a few distilleries that started small and distilled in there basement, backyards for years perfecting their craft. You just got to start. Keep me posted on when you start. Great video. I learned a lot particularly a new head sealing technique. Putting a lip around the top of the pot and just using water to seal the head is such a simple and elegant solution. Certainly beats the old flour paste method. Thanks for sharing.

I like how this was produced, very to the point with lots of visuals depicting Neven's environment as well as his procedures. I especially enjoyed the personal interactions and how you looked at him as if you were a music student in the presence of Mozart himself. Any average one of us would meet a guy like Neven and assume there's not much going on within this guy but, yikes, he is internally bubbling with insights and skills. Awesome presentation of an awesome individual doing seriously intriguing stuff there. 10 thumbs up.

So if I made a blackberry and sugar mash and distilled that is what I get called brandy or do I have to Age it will oak for it to become brandy ..... sorry I a newbie at distilling

Just starting to expand into brandy. I've made plenty of whiskey and there certainly is a few different things between the two techniques.

What a wonderful video! I dated a girl briefly that was from Bosnia. She gave me a bottle of plum rakija (?sp) that her Dad made - prob. about 100proof. It was SO delicious! It was unlike any other spirit I had ever tasted up till then, and I was hooked. Since then I've found some Hungarian apricot brandies in that style, but not really any good plum ones. Anyone have suggestions for commercially available, E. European style plum brandies?

I've had home-made fruit brandy from Hungary ("Pálinka") several times, both plum and apricot. It can be really tasty but also very strong!

Hey Jeff, found you by (happy) accident, loving it! ( new subscriber). You gotta come to Ireland (when you can, if you haven't already?) The traditional Poteen makers still exist (even though it is illegal.....), it is a 'high art' and one that I'm sure you would appreciate. I'm certain you'd get a very warm welcome if you were prepared to 'be discrete' As the main ingredients are oats and barley, possibly later in the year would be best. Slainte.

at 6:24 your caption says "low wines" but you meant "fore-shots" the harmful portion of the run before the heads is about %2 of the total volume of the run. I have hear it is an excellent glass cleaner and fuel alcohol.

should you strain the juice from the pulp before distilling? I've heard some people say if you distill pulp it can burn at the bottom of the still and cause unwanted burnt/ bitter flavours

so for the first run = no pulp distilled...only pure juice? just to confirm.....so the whole process was a double distillation? did you discard the foreshots in both first and second distillation?

@@12xxddr so you don’t want any pulp because of scorching which will produces off flavors I. The final distillation. We double distilled and made cut points based off heads, hearts, tails. With the end result being around mid to high 50s ABV.

see what sucks is i want to LEARN how to make brandy every part of it and make some so say like 30-40 years down the road i have some aged stuff so i dont have to buy some expensive stuff then, be able to make my own blend of what i know would taste good.

@@drinkdestinations That explains why you usually have several different things in one region. It really shows that you're doing your research. The videos are of a high quality, not only content-wise but also the cinematography. Huge praise from my side for that.

F.C. Laukhard can’t thank you enough! A lot of work goes into these episodes, and I don’t expect people to know what all goes into making them, but it’s nice to get messages like this, because I pride myself on the amount of work goes into each and every episode. @@drinkdestinations i believe last time i checked there were only 1 or 2 kinds ,perhaps there is more now,but Maraska Sliv is what im eyeing for now but at 30 bucks for 750ml its more expensive than my whisky lol ,,i know what you mean about getting a free bottle from your buddy,in fact when i was into gin i made this cocktail recipe that everyone loved and back then there was this new gin company on the market and i enjoyed there product so i got in touch with them in london and told them about my recipe with there gin so they obviously loved the idea and published my recipe along with a couple of pics i took on there website where there are other ppl who done the same because one of the brothers who owns the company travels to promote there product and he meets these bartenders and ppl coming up with new recipes which they post on there site,,one of the brothers by chance came to visit a local booze store here where i live so i met him and he was kind enough to get me different parafanelias associated to there label,like a t shirt,key chains ,condoms lol,etc and he handed me a bottle too (nice score),,i love exploring all kinds of spirits and how they are made,i started with gin,then whisky and now vodka ,i even make my own homebrew and distill as well different stuff,i got a batch of grappa mash for my next one :) cheers

@@drinkdestinations i was hoping to get a reply from you on that last one,wondering if you got it,,but i just got a bottle of Maraska Stara Sljivovica from croatia,it's aroma and flavor reminded me of another eau de vie(fruit moonshine) that i had from germany which was from pears and apples ,i really am enjoying this stuff its pretty smooth almost like water with a nice kick and the flavor hits me back after a few burbs lol very good with a cup of coffee on the side too,of course id like to try the real stuff like you have,i can def taste the difference in alc made from fruits and those made from grains,i am drinking some now as i watch this again :)

Great question and It comes down to size of the still, the lines and how much you are distilling. It would be flowing good if the still was three times the size and diameter of pipes were bigger.

Does he decide on the percentages of blending the heart, tail and smell or do they just all get mixed together?

He only works with the hearts. The tails he will redistill. But knowing when to make those cuts was fascinating to me. All by his senses. I hope this answers your question and if not let me know and will try and explain better. Thanks. -Jeff

btw since i have explored into plumb brandies in term of moonshine i tried a couple of kinds the maraska brand and one called navip that is supposedly aged 5 years although it has a very straw pale color and i did not like it, it was half way between shine and aged and just tasted bland and not pleasant or right , the maraska one from croatia is def my go too for eau de vie plumb shine, both aroma and flavor are spot on with a hint of tails in the right amount and after a couple days in the bottle with just a couple ounces removed it was so smooth i could not believe how it changed from rough to mellow like that , but i recently dabbled into an oak barrel aged one from serbia called stara sokolova after some research and finding a store that had more variety and im not into brandies but this was spectacular ,has faint old aged plum aroma notes and suttle plum smooth flavor with roasted nuts like almond /hazel on the finish ,very lovely stuff and def a brandy i would drink with cigar or certain foods or just a winter warming sipper on its own ,and the unaged maraska i even make cold remedy from it ,so slivovica maraska and stara sokolova are def my go too's from now on although the last one more pricey , i also recieved an older looking bottle of plum hine from hungary and dont really know the brand name but im saving that one to learn more about it ,could be something they have there or perhaps an old bottle someone found in the cabinet

@@drinkdestinations correct he was talking about making his own distillery in this vid that i first saw 2 year ago so then why is he introduced as a distillery owner with the name kapela in the vid? either this info was there originally for some reason or you recently edited it in as new info but it confuses with the content of the vid as he is talking about the future and owning a distillery yet you introduce him as a distillery owner?, this was the confusing part when i am watching this vid again 2 years later

@@drinkdestinations btw last time we spoke i was telling you about that plum brandy i got from the store made in croatia called sliivovica by maraska in zadar area and you said you would ask neven what he thinks of that brand,,wondering if you did(probably not lol),or maybe i can ask him directly,,think i saw one of his comments down here or if you can direct me to his email ,,,so how are you lately and any new projects? ill have to check out your ch again
