How China’s ‘Smelliest’ Noodles Are Made
Luosifen, or snail noodles, are one of China’s most popular dishes. And the thing that makes them stand out is the smell. Some Chinese people have compared it to that of a “chemical bomb.”
We went to the dish’s birthplace of Liuzhou, southwestern China, to learn how it’s made and what makes it so smelly.

yeah its a really overhyped detail. stinky tofu is much worse, and w stinky tofu it also makes the flavor much more of an acquired taste. vs with this the flavor is delicious and easy to like even if you think the smell is strong
I'm eating a packaged version of this now. So much hype about the smell. I already eat the pickled veg, and sometimes pickled bamboo shoots (I love minced pork with preserved vegetable). I added green beans and wood ear, to make it a bit more healthy. I'm imagining just how utterly delicious this would be if I ate a well-made bowl at one of these restaurants. It is pretty spicy, though, a numbing spiciness. But I love spicy food.

need to buy next time in Chinatown! first time hearing about was from Kinoshita Yuka vid, didn't know it contained snails haha
Love these noodles. I have 3 different packs in my kitchen right now.
I live in Liuzhou, home of 螺蛳粉 (luosifen). Like most people here, I find there is no particularly rank or even mildly offensive odor. What most of us hate is the prepackaged crap that is sold as luosifen. Freshly made luosifen in the many larger or hole-in-the-wall restaurants are infinitely better. That claim in the video that instant luosifen tastes exactly like the real ones is utter nonsense. The most popular addition to luosifen is braised ducks' feet. Guangxi is NOT famed for strong, spicy flavors, at all! Who told you that? Guangxi is well-known for having two distinct cuisines. Southern Guangxi favors its neighbor Guangdong's style of food; i..e Cantonese which certainly doesn't lean to strong or spicy! The north leans to its neighbors - Hunan and Guizhou which is spicy. Liuzhou lies right on the cusp of the two, although it leans slightly to the north. I know many Liuzhou people who can't take spicy. There are not normally snails in the dish. The broth is made using snails but these are discarded when the flavor is in the broth. They are NOT dissolved, either as some have claimed.

The snails are not dissolved! They are used to flavor the stock, then discarded.
Take it easy, fermented bamboo shot is not a big deal, it’s delicious 😋
My mouth waters looking at it😋😋😋
When I was in college, there was a snail powder shop nearby. Every time when I pass by, I thought there was a broken public toilet there.

I'm guessing the bamboo shoots have kind a kimchi type a smell ..I know alot of people don't like it but I thinks it's good af
I usually throw away the packaged chilli oil. Because i would get sick and throw up if i add it in. Happened twice to me so i dont put it in anymore. The rest of it taste good tho. I ended up adding laoganma chilli oil instead xD

$1 or $2 per bowl. Gosh, I miss home so much
The female chef did say that many people don't like the taste of the pickled bamboo shoots but the ingredient was crucial for depth of flavour-- I didn't hear anybody explain that it was that ingredient that had the offensively strong smell. Which part of the video did I miss for this information? Also, it would have been nice to try to explain to the viewers what the dish smelled the most similar to, so we could compare or imagine the rough ballpark. There's a sensory disconnect for me and I felt very left out and therefore didn't engage and could not give you a thumbs up. Just thought I'd give you feedback as you guys normally put good, thoughtful videos out. Not a big deal, I just feel you missed a vital element here for this viewer.

Ah, but one off hand personal opinion is just not enough for me, especially as it was just one vlogger in the kitchen eating and not coming from a Chinese chef doing the actual cooking. I was hoping for more information and evocative descriptions...just to know why a pickled bamboo shoot would stink so badly as opposed to other kinds of pickled vegetables and what it smelled similar to etc. How do they pickle the shoot exactly and why does a pickled vegetable stink? So many unanswered questions :) Also, are the snails pulled out of the shell before being added to the broth or do they naturally fall out? How are they eaten? What is the texture? Do they have pungency also? Such a great topic for a video and so much missing here. Disappointing.

@@ciganyweaverandherperiwink6293 I would say that that was a statement of fact in an "everybody knows" fashion (which is likely true for the show's producers and also probably its intended audience).
I really wish I could go try them.😢 The last time I had to travel through China i was not treated well. I know not everyone in China is like that, but it's scary being out of your country and not knowing the kind of person your going to get. Maybe things will calm down some day and I can do a food tour of Asia.

You should have a look in an Oriental store, where they sell Chinese goods. I bought 2 packets just last week, here in Amsterdam (NL). It's called: Hao Huan Luo (sometimes there's no space between the words. Then it's: HaoHuanLuo).
i'm cambodian. but l like all chinese flavor.

This brand Luobawang螺霸王 is best.
i have a serious issue with all those packets of plastic they use. it does not need to be separated like that to such a degree

China's national dish... So many competition
Two days ago I was in an asian supermarket and decided to pick out some interesting looking instant noodles because I saw that they had pickled veggies in them, which I like and had never seen in instant noodles before. I did NOT see the small print that said "snail noodles". I scanned the ingredients since I'm vegan and found nothing that seemed to suggest it wasn't so I bought them. It did say artificial shellfish flavour and I just assumed they meant clams...when I unpacked it I found the pouch that said "snail soup base", imagine my surprise. I tried it anyway since I had already bought and opened it. I have to say I didn't even notice the smell of the bamboo shots as being that bad, since most fermented foods have a relatively strong flavour and it really didn't stand out to me. Overall I found the soup base to be the most offensive in taste, there was something about it that reminded me of a mouldy cellar...a very spicy mouldy cellar^^ Seeing this I really hope that these instant noodles weren't made with actual bone broth tho :/ or snails...

Fermented bamboo can't smell that bad. I've eaten many fermented foods and I doubt it's much worse than any other.

They don't. I accidentally bough instant snail noodles 2 days ago and didn't even notice the pickled bamboo shots being extra smelly. no worse than other fermented foods like kimchi or sauerkraut.
It's hella spicy, I don't think I eat it again
My apartment in Guangzhou next to the door to the elevator is a Luosifen restaurant. Everytime i walk past i hate it. So stinky

I crave stinky tofu and stinky tofu smells like sewage and a jock's locker combined. I gag when I smell pickled bamboo shoots. So imagine how bad pickled bamboo shoot smells.
Snail 🐌? Can't get past them. But I've heard some older generation love them.

Judging from the video, I think it's used as one of the components for the broth. Like how some chefs would use pig heads and trotters for their tonkotsu ramen broth in Japan.

It's only regional food! Especially in Liuzhou City, Guangxi Province! I'm from Hefei City Anhui Province and have never ever had it before!😂😂😂Let alone "national dish"🤣🤣🤣

@@dimelo3027 of course it does. Maybe it's not gutter oil though.. it might just be sub quality adulterated oil in India.
I cook and smell so disgusting. I taste it and I don't like it. so I dispose of it immediately.
As a Chinese myself I absolutely hate this dish. Besides the unpleasant smell the flavor isn’t that great either other than being salty and spicy. Take my word not worth a try folks. It’s all hypes and fads.
