I so agree. It's an exceptionally demanding head chef position, in charge of all aspects of both cooking and support/supplies. I don't think she ever sits on her shift except for lunch break, constantly checking the taste of the food and its appearance, constantly checking the functionality of all the equipment, etc. I don't think I could handle such a position.

Yup. Reminds me of a boss I had at a local grocery store. We had orientation at a building across the street, and on the way over to the store, my boss told us new recruits to head into the store, while he went into a neighboring parking lot to grab a shopping cart that some customer of ours had taken off premises. He could have had any of us do it, but he did it himself. This guy was always working. If he was walking from the back of the store to the front, he would face the shelves (move stock to the front) on the way. He was always stopping to pick up little pieces of paper or whatever off of the floor while on his way to somewhere else. It made everyone else OK with doing that as well. He didn't just order people around.

BS, an apprentice starts a regular sushi place, they're on rice duty on their first few days. I live in Japan. That perfect place you imagine exists only in your heads. There are more than 20000 sushi places only in Tokyo. If an apprentice took 3 years to make rice all those places wouldn't be able to find enough people to work for them.

@@ibec69 Im pretty sure they mean real deal top sushi rice. I’m not an expert but there’s a certain technique to make it, and many small aspects like washing it (how many times, how long, maybe even temperature of the water), the cooking method, water to rice ratio, vinegar amount, how to stir to steam properly, etc. Even when you got this down, it’s hard to keep it being consistent. There’s no chance all sushi places have experts making perfect rice, most of us wouldn’t/don’t feel the difference between perfect sushi rice and any sushi rice. This is why not every single sushi shop needs an expert, many people conform with some sticky rice.

At least if I can't be part of a profession that I have true zeal for, it is satisfying to see a person who works in a field that they truly love. Both are amazing, but Wicked Spoon feels more like a weird cafeteria for foodies, and Bacchanal has a lot of what makes an amazing buffet great, carvery station, multi-national/ ethnic food stations (that are actually traditional), amazing pastry and confectionery, and most importantly great staff.
