“Ramen to me is life,” says Kenshiro Uki who grew up eating ramen every Sunday. His family has been producing traditional Japanese ramen noodles since 1981 when his parents opened Sun Noodle. Today, the company produces 300,000 portions of noodles every day that it delivers throughout the country, including to popular restaurants like Momofuku and Ivan Ramen in New York City.

Minca was the first ramen place that I fell in love with in NYC. My friend Mindy lived in the neighborhood and took me there. Really awesome to hear that it was instrumental in helping establish Sun Noodle in the city.

I lived in alphabet city and one of my roommates at the time took me there. Over the next few months went back and tried almost everything on the menu, everything was amazing. I now live in Chicago and there is no shortage of good ramen here but I sometimes miss when I could walk over to Minca. I had heard of Sun noodles but had no idea Minca was their first NYC customer, learn something everyday!
Kenshiro and the Sun Noodle team is so committed to quality and integrity! We are so lucky to have them creating the best ramen out there!

It's your opinion, but there are millions of people like me who don't agree. Obviously, I'm not going to be in this comment section telling your to mind your business or be as angry to ask you to shut your mouth, especially when you consider the political climate, actual climate, and it's just honestly not how I do things and so I respect you big time. Just know that they're not that great and millions are extremely better, that's not being anything other than a generous.

Whether it's in a food factory or the kitchen of a restaurant. It's great to see how things are made each day. And the history behind it.
Those noodles could wrap me up in my sleep and I wouldn't complain about it. So satisfying to see this whole process unfold. Mesmerizing and just tingly to the touch.
I grew up in Hawaii, and I think it was the original location of the OG factory that my mom went to and would buy a bag of their ramen noodles. It was cheap since it was just a paper bag back then if you go to the factory directly. They've since moved from the neighborhood but I get to buy it at the stores, sadly the stores only have a limited number of type of noodles they sell. It's mostly prepacked noodles with soup base.
Sun Noodles is a 20 minute drive from my home. It is my favorite brand of noodles. I just learned that the owner of the Company is originally from Tochigi Prefecture where my mother was from, and my family ancestry goes back over 800 years. I was just there in late October in Nikko, and Ashio. I have family in Utsunomiya too. Nice to find a connection with my favorite noodles. 😁👍
When I see videos like this that show the factories, I'm in awe. As amazing as the food products are, It's really cool to see how people created these machines and components to automate and make the food processing easier.
You can really tell that the man knows and loves his craft
Nice to see the family continuing the tradition of making quality noodles.
Minca was the first place that I had proper ramen. Still my favorite Ramen shop.
Amazing, what a great process and the fact they make it to taste of their costumer is stunning. Also the older chap at Minca - damn i want his ramen so bad.
I really wish they would sell just the noodles commercial instead of wholesale
A well made video showing the whole process, kudos to everyone involved in the making.
Wonderful segment. I’ve always admired the Japanese way of life. The artisans take an immense pride in their craft. Happy Holidays from Brooklyn, NY.
Seems like such a cool dude. Props to him for saving his family business and taking it to new heights!
This man understands his craft well and is passionate about it! No wonder he is successful!
This is wonderful hearing from a family with a passion for something, working to perfect it, and developing lifetime relationships. I love it. Thank you so much for sharing Kenshiro Uki with us.
incredible attention to detail. what a craft.
Love the details of the noodles
I had no idea ramen noddles were so diverse. I thought Ramen was Ramen. What an interesting episode.

Admit it, you thought Ramen was Instant Noodles 🤣
What a wonderfully informative video of the operations at your factory. And thank you for sharing stories of your family's passion for Ramen noodles!
So simple and so perfect product
Well done guys. Keep it up, stay positive. Good luck and prosperity to you.
Love this, defo need to check out the ramen shop he mentioned, the senpai is the definition of a Japanese ramen master og
You might wanna work on fixing the volume between different scenes. I had to constantly adjust the volume cuz in some scenes his voice was super loud and in other it was so low I had to turn it up quite a bit
Now I want a bowl of ramen after watching this.
I always appreciate the effort Japanese put in there dishes
its true that for a while, Sun Noodle as a brand didn't have the best reputation. cool to see how it is turning itself around
Thank you Eater! I always learn something and find inspiration. I will definitely find these noodles! I think for New Year 2024
awesome story/video
Awesome to see what you have built up in 10 years
Great episode 😊
All the dishes look delicious! I'll be your taste tester anytime! 😆
My goodness, I don't even eat Ramen like that, but i seen a few dishes I want to try! Happy New Years all! #BeSafe!
Good to see a familiar SUN Noodle factory from "Alex French Guy Cooking" ramen series.
Kenshiro and the legend of the Sun Noodles
Wonderful!
I lived in Tochigi prefecture in 2015 for a year. I would eat ramen at least twice a week. Tonkotsu was myf favorite. However the city I lived in was known for their high quality beef.
Nice work
Gluten, my favorite. Crunch smooth flavor to die for.
Best one to date.
I could eat Japanese food every single day and never get sick of it 🤤🤤🤤

that's also because back then ramen was only really known in america as the Nissin/Cup Noodle type dry ramen. People have learned ramen is actually much more complex as a dish than that.
Its funny how you mentioned Ivan ramen I went there a while ago and dying to go back
heaven
I work at momosan and the noodles are super good, but sometimes I think delivery services like squish the boxes together and rough them up so some noodles just stick together 😢
I wish they have retail
Really miss ramen lab!
Best Noodles
Can anybody tell me which NYC Ramen shops make their own noodles???
I use these.. the Japanese international students always comment that the noodles are oily.
could you maybe upload the diagram shown at 0:51 ?
That kimchi ramen looks insane
I have 2 shoyu sun noodles defrosting as im watching this... Thank god. 1 baggy is never enough
Too yummy
Most of the video sounds like someone forgot to turn the radio off in the background. Your audio mixes need work, it's supposed to add to the video, not distract. Did anyone even listen to the audio mix before hitting the publish button?
where can i buy them?
I guess I'm buying some noodles right now, lets see how Sun Noodles are.
which retail store sells this?
Imagine being an up and coming noodle guy in 1980s Japan.
As a Chinese we call the thick noodle mee pok, thin noodle mee kia
“All the flours we have here have a purpose” Man all these all purpose flours finding their purpose in life and I’m still confused af 😂

I love noodles. I’m a noodlehead.
How do I apply to be on the QC team and eat noodles everyday? lol
...mmmmmmMMMM DALACIOUS 🍜🍜🍜 RAMEN.!!! 😋😋😋
Even the noodles are actually from Jersey. Go Big Blue 💙🏈🗽🗽
Jake really said “pizzas on me” and then only bought one slice
Man the only ramen I eat is maruchan 😩 gotta expand my cultural horizons.
I’m allergic to gluten, why on earth am I torturing myself with this video 😂
Nice noodles, but Minca seems to overcook the ramen egg. I don't like hard-boiled eggs. The yolk should be like jelly and preferably soaked in shoyu and mirin overnight in the fridge to boost the flavor.
Wawww…
He's so cute
Very impressive. It makes me sad to see people getting ramen to-go or delivered.

45 minutes to eat a bowl of ramen? Why such a long time? I’m done in 10-15 minutes and I get on with my day 😅
Canada YEHHHHHHHHHH REPRESENTED xD
I'll be damned if it takes me 45 mins to eat Ramen. American's need to speed it up!
Slurp like that near me and they'd be wearing the bloody stuff.
1:36 this flour looks like a scam. it is probably great quality, - but might be overpriced. does anyone know why they are not using semolina flour for the noodles?
My first question was who the hell spends 45 minutes eating a bowl of ramen.
