What a fantastic atmosphere Chef has created here. The team seems to genuinely enjoy their (admittedly very hard) work and the fact that they talk casually, honestly and respectfully to each other speaks volumes. Beautiful looking food as well. Can't wait to hop the R to Brooklyn!

What stands out is the teamwork. They seem to work very well together. It looks like they’re constantly able to learn new things from each other and have some nice banter along the way. A lot can be mimicked, not just in a kitchen.

Proves that chefs don’t need to be Aholes.
Not many kitchens will work like this but clearly chef Mitchell's is an exception. Obviously the cameras are there and everyone puts on a bit of a face but you tell how appreciative his cooks and chefs are for the opportunity he gives them to learn and excel. As he mentioned, I think it's so important to allow young cooks/chefs the chance to work multiple stations and get the perspective of how everything gets put together - so they can learn to embrace the new challenges and techniques as opposed to being intimidated by them.

I noticed they did a lot of showy cuts when preparing the fish fillets. Definitely making it look good for the camera. Normally they could have prepped that fish in like four cuts
I love how when he decided to test out the new dish that he let all his chefs try it and give an opinion. Also how he jumps in there with his team and is willing to help get things done. You can tell by the way the team is happy to do their job that there is a lot of love and respect in this kitchen ! Love it !

I have both fish and unless the sauce is actually the main part the stripe bass is way better. Guarantee if he had just the fish alone he would have seen how much better the stripe bass actually is.

What a pleasure it has been seeing Charlie progress as a chef from the times we worked along side each other here in the Detroit Metro area to where he is now.

What an amazing place! I love seeing Black folks show up and excel in spaces that you least expect and it feels even better to see them act like men I grew up with or in my family. Bussin on each other, the music, the care. I’ve only eaten at one James Beard award winner and never a spot with a star but I’d love to eat here. Also Tatiana. It’s a great time for Black Chefs.

Instead of beating each other down like it seems most chefs in this sort of business do, these guys bring each other up. That's awesome. Really makes me think differently of the restaurant business.

6 hours may seem like a lot for prep time. he is right. it is not. i've been a prep for years. there's so much to prepare when youre feeding 100s of ppl. thousands sometimes. i def respect all prep cooks out there!

I have to say: The statement @ 6:10 is something you hear in parts but never put side-by-side. Often people asign value to something because of hearsay or precieved value and run with it, OR say the latter half of chef's statement about locality and run with that. I LOVE that he and his team actually try them both and find their own value- and support locally if and when it makes sense.
There's nothing better than a workplace with a very positive atmosphere.
That was really exciting to watch with the music, the food prep, and the incredible team at Clover Hill. So fun to watch the sous chef and mad respect for Chef Charlie's beliefs and approach to work. Could watch them all day..

Had a friend who worked there and left for a career change. Nothing but great things to say. They pay their employees very well. It’s actually one of the few who puts it back into the talent.

Growing up in Brooklyn it was always the place to be. Its diversity making it so special. and as one group of peoples moved out and onto the mainland, other immigrants groups of people and new cultures carrying their traditions and foods moved in. And now for better and to a degree for worst, Brooklyn is quickly moving to become Ny's focal point. The fact it has real neighborhoods, fine schools, and all the amenities of Manhattan. Great parks and recreation, beaches, museums you name it. Always had it, but now people who typically stayed out, are now seeing what they've been missing all along.
Perfection. Precision. Artistic. Professionalism. I don't think I have anything else to say. A five-star restaurant with great hospitality. Nice place to dine in

Love Clover Hill! We were there for Brunch, shortly before they received their star and had a dinner tasting menu!
