How 500 Pounds Of Lamb Barbacoa Is Cooked Every Weekend In Texcoco, Mexico | Big Batches
Inside El Pica 1 in Texcoco, Mexico, the original barbecue of the Americas is still being cooked low and slow inside of pit ovens. The restaurant’s lamb barbacoa recipe starts with wrapping lamb in long maguey leaves, and cooking it overnight for 11 hours to create a tender barbacoa full of sweet and smoky flavors. The restaurant sells around 500 pounds of barbecue every weekend for $10 a pound, serving nearly 1,200 people in two days.
We visited El Pica 1 to see how to make their lamb barbacoa, and what it takes to make such Big Batches.

As a New Zealander all I can say is for anyone who eats meat there is literally nothing more delicious than Lamb. But watching these people working together is just so meaningful to me because coming together to cook and eat together is such an intimate, bonding moment. It's something we all share and whether it's family, friends or even complete strangers. Breaking bread together or in this case cooking lamb its the ultimate human experience.

I think there is something quite special that even though there is demand for it he keeps the capacity he can sustain, plus 500 pounds and sells out weekly is absolutely astonishing. I love the care, time, and effort that goes into all aspects of making something the traditional way. I hope they continue to have success for generations to come ☺

Rite I always say the only culture America got is southern culture and most of that is culture they adopted from the indigenous natives or Mexicans.
Legendary, I gotta go try this
This is God's gift to man and man's perfection at its finest. Amen to the love put into preparing the meal
oh good lord i just finished my dinner and now im HUNGRY AGAIN
Making Barbacoa, is an art!! But, the taste is from another world!!! Chulada!!!
Wishing someday I could try this food and visit this country
Very cool to see the traditional ways of cooking here I love it!
Wow, that looks amazing!
I'm not a big lamb guy but that looks phenomenal and I'll take 10
I want to try this badly! Looks amazing. Great craft.
Being a "live to eat" sort of foodie, food videos are always a treat to watch for me. Add to that the delicious, tender lamb that they probably cook here, every weekend, and my delight can be imaginable by all my fellow foodies out there. But despite all this, my takeaway from this video today, is that one sentence of Saul that sums up the key to his success - "It's not luck. It's work. It's about being consistent." And for this most important lesson of life, I thank you, Saul. I salute your hard work, my friend. I look forward to tasting your lamb barbacoa someday :(
Beautiful Video. Thank You.
I'm an Indian working at Mexican Restaurant in Dubai and trust Mexican cuisine is the best of the best barbacoa, taco dorado, beria, suadero chicken pastor uffff aa lavergaa amazing 😍😍😍😍😍
Now that is some mighty tasty looking grub!!! Nothing like making some homemade grub that is made with heart and soul. Tastes so much better when you put the work into making it taste great. ...You don't get that from fast food joints like McNasty's.

Another thing to note is this BBQ is being done at high altitude, over 2,000m/7,000ft. That is why you need to have plenty of moisture in your ovens. You have make adjustments compared to cooking at sea level.

Hey❤️ I may not know you personally however I care about you deeply because I know how much you mean to Jesus Christ The King of ALL CREATION . I want to tell you that Jesus Christ loves you so much, he died for our sins so that whoever believes in him wouldn’t have to perish in hell but instead have eternal life in heaven. You need to understand that HEAVEN and HELL are 1000% REAL they aren’t imaginary , and hell is a horrible place I wouldn’t wish on my worst enemy. God doesn’t want you to end up there he wants you in heaven and so he is giving you a chance to accept the sacrifice of his son Jesus Christ and be saved. Day by Day the world is falling apart because we are literally living in the last days of Earth there is no doubt or debate about it, Jesus Christ is coming faster then you think to bring judgement to the world and to destroy it. This really is URGENT, it’s NOT A JOKE ,Tomorrow isn’t promised to anyone, you can be alive one minute and gone the next, please take this opportunity to be on the side of Mercy confess your sins and wicked ways to Jesus , sincerely REPENT/turn away from them, ask for his forgiveness, and be baptized at a real bible believing church- ask him to enter your heart and to be your Lord and Savior before it is too late , truly believe in him and he WILL do it because it is his promise. It’s important that you seek the righteous and Holy path of the Most high God so that you may inherit eternal life and be spared of Hell fire. You can begin a new life in Christ and have a genuine relationship with him, please repent. Jesus changed my life and he will change yours too🥰, He is coming NOW! not SOON- when you least expect it!, therefore repent and make sure you are prepared. May the Lord be with you eternally💕🙏🏾
Oh, my mouth is watering watching this! Yum!!
That prep work is insane!
This Is almost like art. Ya esta comida es arte!
Everything he does is similar to what we do in parts of India except the leaf being used is banana leaf. Once the meat is surrounded in the leaf, the whole thing put inside a jute bag and lowered into a pit which has coal or wood that was lit up a hrs before. Once lowered, the pit is filled with mud and allowed to cook for hours. Once done, the mud is removed, the jute bag is lifted up, then banana leaf is removed and then you have the cooked meat with all the spices added to it. But what is in this video is similar in idea, but I wonder what flavors that leaf adds. Great job and glad to see how well it was done and people enjoying it.

Yeah I think in the Yucatan peninsula they use this method with banana leaves to cook cochinita pibil.

Everytime I eat a barbacoa or a good mole I always get this huge sense of pride that the Raza has managed to preserve thousands of years of culinary tradition, going back to the old country and seeing the lady's make tortillas from scratch with a a metate is just an incredible experience. Plus the diversity of our cuisine is something that is extremely understated.

Thank you for correcting "mole" and I agree with you, the Raza ought to be extremely proud of not only culinary tradition, but the culture in general. Consider this: The combination of beans and rice creates a complete protein. Now, how on earth did the Aztecs and the Mayans figure this out thousands of years ago (beans and rice are a staple of Mexican cuisine)?
If anyone lives near, or is in SoCal, there are 2 locations of Aqui es Texcoco that serves the cuisine of the region, especially the bbq lamb. And chapulins. :)

Just looked at some pics, that looks like literally every other gringo restaurant, and it's obviously a mediocre imitation. Why do you say cuisine of the region? Texcoco is just outside of Mexico city, the place with the textbook example of the opposite to gringo imitations, so, don't say that's my land's cuisine, please 😐 if you like that, enjoy it, but don't be disrespectful.
This is heaven level cooking. What a great way to cook 👏🏼
Those blue tortillas are my favorite to dip it in my consomé with a lot of salsa happy that Mexican cuisine has the respect and all my brothers and sisters around the world can enjoy it like we do
it looks insane im dying to try this
He is not giving up his secret method of knowing the ovens’ temperatures.
This looks so amazingly good
I can see the passion and love for the food from his words....
That’s my favorite MEXICAN food!.!.
I grew up in Texcoco and yes, it is absolutely delicious. Also you should try in another place called Tezontepec in Hidalgo.

In the northern part of Mexico we do it in a different style and we use beef. Both are really good. The majority of Mexicans go for barbacoa, bofes, and menudo every Sunday.

Lamb is my favourite meat, its a staple in Australia. I was pretty surprised the first time I saw how popular it is in Mexico! I would really like to try Mexican lamb dishes, they are completely foreign to me and would be exciting to try. Like lamb is really popular there, I wonder why its not much of a thing in the US? Is it more popular closer to the order maybe?

When he talked about salsa ft mexican romantic music in the backgroung was very romantic you can feel his love for his food and craft😊😊
very true words Saul says, "is not luck, it's hard work and consistency" very very true and can be applied to most every successful situation and i also admire how he rather offer a superb service and good food over mass produced product
We mexicans take food really serious, if anyone have the chance to come and taste that, you wouldn't want to leave.
The dish looks delicious. Viva la Mexico.
