Legendary sushi chef Masa Takayama was the first Japanese chef to helm a restaurant that was awarded three Michelin stars in the US. Now, he's going to show you how he cooks at home by using one fish to make three dishes.
This zero-waste approach is going to use every part of the fish-even the bones and head-and use a variety of techniques, and not just Japanese ones. You'll also find out why you shouldn't buy ponzu sauce from the store.

Thats home cooking, the point of the exact ingredient is in this case to give heat and flavour. You can use whatever that can accomplish that. That's always a point with even more complicated recipes. You can experiment with already set recipes, but you should know what you are doing to the dish.

I love how that guy is just following his chef around it shows a good work ethic and interest in what's going on. He must be a good worker!
I love that we see the sous chef helping where he can. Chefs and sous chefs are really one of the last "master and apprentice" rolls that used to be more prevalent in day to day society. It's great to see someone eager to learn helping where they can.
I was so intrigued with this man’s passion for his fish and how he is so willing to share his technique, that I didn’t even notice the music until I read the comments. Just enjoy the video

i love that his sous chef is so entertained by what he does and is trying to do his stuff and watch at the same time
So to make ponzu sauce, you can mix 60% orange juice, 30% regular soy sauce, 10% fish sauce, optionally vinegar to taste. Sounds legit, need to test this soon!

i love that he keep emphasizing the idea of using what ever you have on hand to make something good. lets not forget we are basically watching an old japanese man in a wool cap grill fish heads, but because he knows what hes going an its delicious. we get too caught up in using expensive things to make a dish good and not focusing on how and what we are doing to it

Ordered a pizza and wanted to watch this guy cook. Ended up eating my pizza while listening to the background music. Superb.
You can tell how much this guy loved to cook as a child. Like, highly efficient, clean, home style comfort food.
What an amazing gentleman. It's a really nice perspective on Japanese cuisine. Coming from Portugal, where fish as a big role on our diets like in Japan, I can appreciate the fact that he uses all the fish, no waste. We do the same... mostly!

Looking by the shape, seem like those knives are only for showing. Cheap knives kinda thing. Thats why he braves enough to chopped the egg with it on top of the metal grill. Hell no way he uses the knife he used to fillet the fish. Or sashimi knife.

That soup reminds me of the one my tatay usually makes from leftover grilled catfish. The charred taste of the fish really gives kick to the vegetable soup, which all ingredients usually came from our back yard 😁

I remembered when Anthony Bourdain met Masa along with his family and friends in Japan. He's such a great guy and one hell of a talented chef. I would love to meet him one day and get to try his food.

Not to be a dick but HE doesn't have any Michelin stars, his Restaurant has the stars. It's a common misunderstanding and another reason the Michelin system is a bit bollocks. i'd be more curious to watch him cook it if he had a whole pile of left overs, kinda surprised me he didnt simmer the fish head in the broth for a little to try get some flavour into the broth out of the bone same with the tail. perhaps just leaving it sitting in the broth before eating gave enough. ill never know
