Hot Honey Ribs On The FEC100 Pellet Smoker | Ash Kickin' BBQ

Full Recipe:

-Ribs
-Ash Kickin' BBQ Honey Chipotle
-SuckleBusters SPG
-Vinegar BBQ Sauce
-Crybaby Craig's Hot Honey
| Instructions |
Prep:
1. Remove the ribs from the packaging and pat dry.
2. Trim the ribs, and remove the membrane.
3. Season the ribs with a layer of SuckleBusters SPG, followed by a layer of my Ash Kickin' BBQ Honey Chipotle.

1. Set your smoker for 180º F and smoke the ribs for one hour. If your smoker doesn't go that low, just smoke them at 250º F the entire cook.
2. After 1 hour at 180º F, bump the temperature up to 250º F and continue smoking the ribs until the color is where you want it, and the seasoning has set.
3. Once the ribs have reached the right color, and the bark is set, it's time to wrap. Lay down two sheets of aluminum foil, and then lay down a half of stick of butter, couple lines of vinegar BBQ sauce, and then a couple lines of hot honey, then put the ribs meat side down. Then wrap the ribs up tightly, and return to the smoker.
4. Once the ribs are back on the smoker, I would check them after 1 hour for doneness. For mine to finish, it took about an hour. If after the hour mark, check every 15 minutes. The ribs should bend easily, but not break. typically 203-205º in the center of the rack is a good number, but this is a guideline. You MUST go by feel.
5. Once the ribs are one, remove them from the smoker, and let them rest for 20 minutes completely wrapped up.
6. After a 20 minute rest, remove your hot honey ribs, slice, eat, and enjoy! I promise these will be a hit for anyone who eats them!

    It’s definitely available in Canada check the Lumber Jack Pellet Canadian website, and look under SuckleBusters. I just checked to make sure, and it’s there 👍🏼

    Dude - No reason to wrap on the FEC-100 unless you like making rib candy! Also buy the Cookshack Rib Rack, it works great and you won't get discoloration from your top ribs dripping on bottom racks. I leave every other space in the rib rack open for better air flow, and I get better results using the lower FEC-100 shelves, specifically the shelf right above the temperature probe is best. Smoke on!
