Homemade Pasta 101 Rich egg Pasta Dough - make pasta like a PRO. PASTATUBE

Hello my name is Mateo, also known as " The Pasta Man"
in todays episode I will show you how you can make perfect Pasta dough in 10 minutes!
All you need is 2 ingredients 00 flour ( finely ground flour) you can use all purpose flour, but the end product will be a little bit different, and eggs of course. for more recipes visit my website Mateo.kitchen

MAKES 400G/14OZ, ENOUGH TO SERVE 4
260g/9oz of Italian 00 flour, plus more for dusting
2 whole eggs + 3 egg yolks
Place the flour on a clean worktop or pastry board and shape it into a mound. Make a well in the centre and crack the eggs into it.
Using a fork, break the eggs yolks and start to whisk them, drawing in the flour a little at the time. Continue to combine together with the fork, then when everything starts to come together, start to knead the dough. Use the heel of your hand and push away from you, using your other hand to turn the dough 90 degrees after each knead - you will soon develop a lovely rhythm. Continue to knead for 8-10 minutes until the dough is nice and smooth.
Now form the dough into a flat disc, as this will make it much easier to roll out later. Wrap it tightly in clingfilm and rest in the fridge for at least 30 minutes, or ideally overnight. Resting it makes the structure of the dough smoother and more pliable, so it’s much easier to roll out and shape.
TO MAKE WITH A FOOD PROCESSOR
If you have one you can make pasta dough in a food processor, which is really quick and easy. At home I usually make it by hand - I put some music on and knead to the rhythm of some 80s classics!

    Can I make garganelli with this dough? If you make it, how long is it dried and boiled in boiling water for how many minutes?

    Absolutely- dry them first so they keep the shape- try to make them small too, that will help. You will cook them for 2-3 min usually

    Both :) work really well- here trying to reduce amount of leftover egg white. By reducing flour by 20 g and -1 egg yolk which equals (15g )

    Weigh the duck eggs if the weight it’s for example 60g you need to use 100-110g of flour

    Can you please explain what's the difference between a dough with only whole eggs and dough with whole eggs + yolks? Why should I add yolks? How will it change the flavor/texture?

    It changes texture and feel of Pasta - adding additional egg yolk and flour make the dough firmer and tastier x

    It didn't worked for me with 260g of "00" flour (with 12g protein / 100g)... maybe the eggs were not big enough. I had to add some water. the pasta dough did not become silky and smooth... after kneading for 15 minutes .. :( in your video the dough is soft from the start. mine was hard :(

    Same here :/ I used Semola Rimacinata, le 5 Stagioni - the dough was really hard from the beginning. I left for 10 mins under the ball, but the consistency didn’t change much. It was difficult to knead. I left in the fridge over the night and will see if I can make the dough into pasta😅 Will definitely purchase flour brand you recommend. Love your pasta work😻
