About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZread.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

    It is so mouthwatering. And I love it that he’s using a ponzu source instead of soy sauce. So he sauce is so strong and salty. Ponzu can be made plain, but usually has a little bit of citrus, or garlic, or ginger when you make it yourself.

    Before eating: Itadakimasu (いただきます) “I humbly receive, let’s eat!”. and After eating: Gochisou sama desu (ごちそうさまです) Long long time ago, for the sake of providing a good meal for its guests, the host would travel long distances by horse to search for fresh and quality ingredients. In return for the enjoyable meal and putting so much effort in searching high and low for the best ingredients, the guests said to the host “ご馳走様です” (go-chi-sou-sama-de-su). The Kanji of “horse” (馬) is reflected in “chi” (馳) because back in the old days where cars were not yet invented, people travelled by horses. The following Kanji “sō” (走) basically means “run” which expresses the travelling required to find good ingredients.

    Great video and I can't wait to try this myself....but that is a YELLOW TAIL not a red snapper. Not much taste difference but just thought you should know the difference species. Keep up the great videos, love your channel

    I was expecting to see you chop up some ginger or something along with the fish, to season and flavor the fish balls. But there are so many other flavors in that assortment of steamed vegetables, I guess the fish doesn't need any more seasoning, right?

    It tastes like whatever you put with it. Has no flavor on its own but absorbs any flavor to taste like anything. It's pretty neat.
