If you only do ONE thing in Hoi An, make that a traditional vietnamese cooking class! We attended the Hoi An Eco Cooking School and had such a great time learning from the owner himself, Kien! Our DELICIOUS menu consisted of pho bo, banana flower & shrimp salad, spring rolls, crispy rice pancake, aubergine with soy tomato sauce and we loved ALL of it! After the class we took a quick pit-stop at our hotel to hire bikes and cycled 5km east, through rice fields and vegetable farms to reach the picturesque An Bang beach. Such a contrast from the ancient town, the smell of the salt water and sand between our toes was the the perfect way to spend a hot summers afternoon in Hoi An - with of course, a coconut coffee & banh mi!
