Hey friends, just a quick note into the health benefits of the aush - it's packed with anti-inflammatory ingredients like beans, lentils, garlic, onions, spices such as turmeric, and a generous helping of a variety of greens. To make the recipe in the traditional way, I used a fair amount of oil, but remember, you can reduce the amount as some oils might contribute to inflammation. Recipe is good but the most unhealthy ingredient is vegetable oil which you always use in your recipe at least change your oil they are seed oil highly inflammatory

Legumes contain phytates, which are not inflammatory. Grains are inflammatory, including noodles, made with wheat flour. PUFA oils like soy, corn and canola are inflammatory.
A tip: Do not throw away overnight soaked water... Water it to plants it acts as a fertilizer. I am pure vegetarian and in India this practice is being followed from decades.

I love these persian recipes you share with us. It is an unknown and underappreciated cuisine, but it all looks so delicious and filling. Vegan cooking just allows you to discover so many cultures and their food and it’s fantastic.

Hi Sadia, as a Persian I was waiting for you to introduce this wholesome dish 🫶 I live in the Netherlands and when I don’t have Reshteh, I buy dry udon noodles from AH and replace it with Reshteh in my Ash 😄

This is one of my favorite soups. I have been making it for years. A Persian friend of mine had me try some and I was hooked . So she gave me the recipe , she adds some cubed beets also. Delicious .

The lady who used to look after me when I was a child was Afgani and made me those amazing foods such as Borani and Ashak and Qabuli polow and she used to love it when my mum (Iranian) made Aush reshteh!!! I always suspected you had roots in Iran:)) As an Iranian who loves Aush resheh with her whole heart, I am SO EXCITED to see this oh my God!✨ p.s, my mom starts cooking any type of aush in the morning on very low heat, and leaves it to cook until evening. Clearly not the best option if you're not home most of the day, but if you have the time and want to make it extra traditional and as my mom says, reduse gas even more, try leaving it on the stove from morning:))

I just wanted to say that my dear friend from Iran, made ash reshte (among other persian dishes) for us last Sunday, and I wanted to tell you all that this soup is miiiiiiindblowingly good!
This looks so delicious. Can you share the lazy version with canned beans etc? I know myself and soaking beans and cooking for hours is never going to happen 😊
I don't think that oil was more considering the amount of main ingredients were to be added later and portions it served. Thanks for sharing this lovely recipe.
I use Japanese soba noodles or buckwheat noodles. It's less salty and still delicious.

I thought the ash is only made in Iran didn’t know afghans also make it , I always enjoy knowing more about other cultures, however your comment is very hostile and doesn’t make people come closer I would appreciate some knowledge but without hostility and judgement.
Love your recipes ! Just wanted to share a secret of cooking beans thats works a treat for me. Gas from eating beans comes if I dont cook them beans enough, soaking water is irrelevant. So on common pot and lid, cook for at least 60 mins, never less. If the beans you are eating are delicious and creamy, but you still having issues, try cooking them further 10 mins or try removing other stuff from the recipe, like onions or fructan containing ingredients you mixing in de pot. bonus tip: Salt your soaking water at 2%, overnight, then discard the brine and rinse the beans. No need salting when cooking unless you really want to

I finally asked my dad to show me how he makes aash last year! He uses great northern beans, pinto beans, and brown lentils. Family friends of ours use chickpeas and other beans. My dad also uses SO MANY noodles that the soup gets super thick 😂 no one else I know makes it like that.

Gluten free tip: I love using lentil spaghetti in soups and stews because they don't overcook. They are also very delicious. I haven't made this one yet, but it looks amazing. Persian food is some of the best I have tried and I don't say that lightly.❤
