High oil temps abound

While flying acro in this sweltering Florida heat, I've had to knock it off several times mid-flight when oil temps spike at 230 degrees. I've got an angle valve Lycoming IO-360 with 10:1 pistons, 24 hours on the engine now since major overhaul, a prop that red lines at 3100 rpm and a single 7 channel oil cooler. Vernatherm checks out but is my oil cooler really functioning well, do I need a second one, or is this to be expected at 100 degrees with mineral oil during break in?
