Healthy Dinner Ideas Under $5 🥙 ( because cost of living 💸 )

Hi friends 🌸 Food prices have been crazy here in New Zealand, and I've also heard from friends around the world that inflation is being felt, especially when it comes to healthy food. We've been changing how we eat to spend less money on food, whilst eating healthy and delicious food that makes us happy.
These recipes also happen to be super simple, so I hope you like them!
💰 All prices are in New Zealand Dollars! 💰
Vegan "fish" soup
1 yellow onion, finely chopped
2 garlic cloves, finely chopped
4 medium sized potatoes, cut into cubes
2 carrots, cut into cubes
1 block firm tofu, cut into cubes
1-2 celery stalks, finely chopped
1/2 cup of cashews, blended with 1/2 cup of water (or store bought soy/oat cooking cream)
pinch of saffron
1 tsp turmeric
1 tsp black pepper
1 tsp salt
1 tsp dried parsley
- Fry vegetables and spices for 5-10 minutes or until fragrant
- Add water to cover and cook until potatoes are tender (10-15 minutes)
- Blend cashews with water and add mix into the soup
- Add cut tofu and cooked until everything is heated through
- Add more water if needed, and serve hot
Baked Beans
1 onion, finely chopped
2 garlic cloves, finely chopped
8 medium potatoes, cut into cubes
700g tomato passata
2 cans butter beans (or any bean)
1/4 cup molasses
4 stalks of kale (or sub for spinach)
2 tsp apple cider vinegar
1 tsp black pepper
1 tsp salt
1 tsp smoked paprika
pinch of chilli flakes
- Fry onion, garlic and spices until fragrant
- Add tomato passata, apple cider vinegar, molasses and cooked beans
- Pour into an oven safe dish and cook for 200 degrees celsius for 30-60 minutes (the longer you cook the more flavour)
- Boil potatoes
- Saute kale in a little bit of water
- Serves 4
Smoothie Bowl
1 banana (for smoothie)
1 1/2 cup frozen berries
200ml soymilk
- Blend all ingredients in a blender, add more water if needed
Toppings
1/2 banana
1/2 kiwifruit
1/4 cup walnuts
1/4 cup berries or fruit of your choice
1 tbs chia seeds
Veggie Stir Fry
2 garlic cloves, finely diced
knob of ginger, finely diced
1 carrot, cut into chunks
1/3 broccoli, cut into chunks
1/5 of a red cabbage, finely diced
1 block firm tofu, cut into cubes (or sub 1 cup edamame beans)
4 mushrooms, finely diced
1/4 cup edamame beans
1/2 cup spinach
pinch of chilli flakes
1 tsp black pepper
1 tbs soy sauce
1 cup cooked quinoa (or rice or noodles) *about 1/2 cup uncooked
- Cook all vegetables, spices, garlic and ginger until soft
- Add tofu and soy sauce and cook until golden
- Cook quinoa
- Serve with quinoa or rice
Lentil Vegetable Soup
1 onion, finely diced
2 garlic cloves, finely diced
2 carrots, cubed
4 potatoes, cubed
1 celery stalk, finely diced
1 tsp salt
1 tsp black pepper
1 tsp dried parsley
1 tsp dried thyme
4 stalks of kale, chopped
2 1/2 cups cooked lentils
- Fry onion, garlic, carrot, potato and spices for 5-10 minutes, or until fragrant
- Add water to cover, cook until potatoes are tender
- Add kale and cooked lentils and cook until kale has wilted, add more water as needed
- Serve hot

    Yes our English prices have risen even more. Will try one of your recipes especially when our Vegan daughter gets home - I dont like tofu but am getting more adventurous. I am eating an RJ's Liquorice Choc log all the way from New Zealand.

    Yes, it's been very noticeable! That is great to hear :) I used to not be able to eat tofu at all, but a good tofu scramble was the first meal that made me be able to eat it at all, and now I quite like it. However, I still can't eat soft tofu haha! And how fun :D

    I'm currently living in a van and house sitting, so don't have any planting space available. one day though! I'd love to learn more about foraging. I feel quite confident foraging in Europe, but not here in New Zealand!
