How to make a healthy Chinese Soup - 蟲草花湯

Chinese soup recipes, even the herbal ones are really simple and easy to make. If available in your area, just walk into your local Chinese medical halls/shops and ask the shopkeeper to gather the ingredients for you. They're ready packed and ready to cook!
For this recipe, the Ginseng Chicken Soup brings a host of health benefits which the Chinese can attest to, such as:
- Boost energy
- Improve brain function and memory
- Strengthen immune system
- Replenish Qi and blood deficiency
- Strengthen physical weakness, due to prolonged illness, injury and exhaustion
- Calm the mind, nerve system, and anxiety
- Regulate blood sugar
- Support heart health
It is really easy to make, especially if you have a slow cooker, its nearly fuss free.
Ingredients - 3 to 4 servings
Chicken Leg (鸡腿肉|雞腿肉) 2 pcs
Ginseng Roots (人参须|人參鬚) 10gm
Dang Shen (党参|黨參) 5gm
Radix Codonopsis (纹党|紋黨) 5gm
Fu Ling (茯苓) 5gm
Huai Shan (淮山|淮山) 20gm
Longan (龙眼|龍眼) 5 - 6 pieces
Astragalus Roots (北芪) 5gm
Solomonseal Rhizome (玉竹) 25gm
Red Dates (红枣|紅棗) 10 - 12 pieces
Goji Berries (枸杞) 10gm
Putting them together
The steps are really easy, just follow these:
1. Blanch chicken in boiled water for about 5 minutes - this ensures that the soup comes out clear and without impurities at the end
2. Pour ingredients and chicken into 2 Litres of water in a soup pot and bring it to boil
3. Once boiling, lower the heat to a simmer and allow it to continue to cook for another 1hr 30min
4. Season with salt according to your preference and let it cook for another 10 minutes before serving
5. If you are using a slow cooker, you just need to add all the ingredients, the meat and the water into the cooker and set it to cook on High for 3 hours or Low for 5 hours
6. It's ready to Serve!
You can have this soup with your normal meal, pair it with some other dishes or have it as just a chicken soup and rice combo.
