The Thielecke family made a new start after the reunification between East and West and breed the Harz red highland cattle, and old cattle type with very tender meat. A regional culinary speciality is the Harz cheese, a low fat yoghurt cheese with an intense aroma.
What's cookin' is about traditional culinary recipes from different European regions.

So amazing to see that the children realize what they have and are not throwing it away to run to large cities. If we are going to survive this modern world and live healthy, we need much more of this. Well done to the family.

0:57 that's a very happy pampered bull, i had one like that, he still let me bottle feed him long after he was grown, my grandpa didn't have the heart to tell me grown cows don't need to be bottle fed, ppl would lose their mind when they saw me bottle feeding a bull that was twice as tall and 50+ times my weight

The red highland cattle are beautiful looking animals and I'm glad that the breed has been saved from dying out. Sometimes, in the drive to produce animals better suited to their primary purpose, we've kind of forgotten that they're living creatures. I look at dairy cattle and think how bony looking they are, despite being told they're perfectly healthy and look the way they do because all their energy goes into producing milk. To my mind, no creature can be truly happy if it's forced to be a milk making machine, or pile on pounds of unnecessary muscle. Let the animals grow slowly, and live natural lives, like these cattle do. But of course, this is merely my opinion on the matter. I leave it to everyone else to judge whether I am right or not!

I doubt that "Knieste" in the dish Hackus und Knieste comes from the kneeling position when harvesting potatoes. I would rather reckon that it is the regional version of "Knüste" - a Low German word for 'end pieces' (like on a bread) . And these are the pieces of the potato or I guess, potato wedges one would say in English.

When I grew up in very German/Norwegian/Scandinavian/Polish Wisconsin, "cannibal sandwiches" (raw beef with onions on little toast or crackers) were a big thing, especially at weddings. This may be a part of where that tradition came from. Then suddenly with all the scares about uncooked meat, "mad cow" disease and the like, eating raw beef fell out of favor. I miss those things, and wonder if it might be possible to resurrect them again with some really good organic ground beef. They sure were tasty!
