Let’s spice things up with a mouth watering #Starter. The #HaraBharaKebab, from #ChefAjayChopra right to your kitchen.
Ingredients
Oil.
Ghee.
Cumin.
2-3 now chopped Green Chilli.
2-3 tsp chopped Ginger.
1 no. chopped Carrot. ¼¼¼¼
1 bowl boiled mashed Peas.
1 bowl boiled pureed Spinach leaves.
1 tsp Cumin Powder.
1/2 tsp Yellow Chilli Powder.
1/2 tsp Garam Masala.
1 small bowl boiled mashed Potatoes.
2 tsp Corn Flour.
Handful dry Fenugreek leaves Powder.
Ingredient for stuffing:
3-4 chopped Cashew nuts.
4-5 chopped Raisins.
1 pinch Garam Masala.
Salt to taste.
1 chopped Green Chilli.
Chopped Ginger.
Chopped Coriander leaves.
1 tsp Lemon juice.
Method for Hara-Bhara Kebab:
Take some oil in a pan and add Ghee to it. Now add some Cumin to it. Add chopped Green Chilli. Now add chopped Ginger to it. Then add chopped carrots and peas and roast them together. Before this boil the peas and make it into a paste, so that the flavours seeps inside. Now add pureed Spinach to it. We need to wash the spinach leaves, then boil or blanch them and puree them before adding. While we are roasting these together we will add some more Ghee. Add 1 tsp roasted Cumin Powder, 1/2 tsp Yellow Chilli Powder, 1/2 tsp Garam Masala Powder. Stir it nicely. Roast it till all the moisture dries out. Then take it out in bowl and cool it down.
Now take some boiled, grated Potatoes, do not grate hot Potatoes. Now add Salt to it. With that add 2 tsp Corn Flour. And handful of dry Fenugreek leaves powder.
Chop a few Cashew nuts, Raisins, and put them in a bowl. Add pinch of Garam Masala, some Salt, and some chopped Green Chillies, some chopped Ginger and a little freshly chopped Coriander. Now add 1 tsp Lemon juice.
Moist your hands with water. Now take the green mixture, flatten it and fill it with the stuffing and close it. If you want to deep fry it the mixture should be tighter. We will shallow fry this. We place a Cashew nut over it. And make a number of Kebab balls.
Put Ghee in a pan for shallow frying the Kebab. Add some Oil in it too. Place these Kebabs in the pan for shallow fry. Cook it from both sides. Now take these out with light hands.
Plate it nicely and enjoy your Hara-Bhara Kebab.

The smoking point of oil is higher than that of Ghee. Adding Oil to Ghee increases the smoking point (burning point) so that the Ghee does not burn on a high flame.

Bahar sab sirf color dala hua hare rang ka kabab milta hai. Rarely you find bhara kabab.. garnish me agar simla aur matar fry karke dale to taste me bhi badhiya lagta hai
I tried same thing. But crispi nahi hua. Bahut hi loose ho rahe the kabab. Koi trick bataiye jisse thoda to kadak kabab bane.

रेणू जी 🙏🙏🙏 पालक जैसी ही बॉईल हो जाये तो तुरंत उसका पाणी निकाल के ऊस पालक को बर्फ के पाणी मे डाल के रखे, याद रहे पाणी मे बर्फ के तुकडे रहे. पालक पाणी मे थंड हो जाणे के बाद मिक्सर मे पीस ले फिर देखे आप पालक का रंग हरा ही रहेगा.👍👍👍

आपने हरा दिखाने के चक्कर मे हरा कलर पेल दिया इसमें जिससे आखिरी में फ्राई करते समय घी खराब हुआ और टेस्ट में भी माइनर इफेक्ट आया
