The snails live on rocks and stones in the seawater and are collected from Guernsey's shores from January to April, under strict control of the local fisheries authority. The shells of the ormers are also used in many ways: to decorate house walls, as soap dishes, as jewellery or as decorative accessories. Guernsey relies on self-sufficiency. The island benefits from the warm Gulf Stream and there are plenty of locally produced vegetables and dairy products. Much of it is sold privately, on the hedge. This is where the name "hedge vegetables" comes from. With the Sholl family we go in search of ormers, learn about seafood burgers, fish pie and an apple pie made from fallen fruit.
