Guaranteed Clean Plates! My Family Favourite Shepherds Pie

Comfort food alert! My Traditional Shepherd's pie with creamy mashed potato and rich gravy just like your mum used to make!
I'm sharing with you my top tips for the perfect crispy top, creamy mash and rich meat sauce, plus I'll show you how to get a jug of lovely rich gravy to go along with it.

Oven Temp 200C (400F) Fan Oven
Ingredients:
1.8kg (4 lb) floury potatoes - such as Maris Piper, peeled and chopped into large chunks
2 tbsp vegetable oil
2 large onion ,peeled and chopped
2 stick celery ,finely chopped
2 carrot ,peeled and finely chopped
900g (2 lb) minced lamb
1 tsp salt
1 tsp black pepper
2 tbsp Worcestershire sauce (check it's a gluten free version if needed)
1l (4 1/2 cups) beef or lamb stock
120ml (1/2 cup) double (heavy) cream
120g (8 tbsp) unsalted butter
2 heaped tbsp cornflour/cornstarch
Process:
1. Place the potatoes in a pan and cover with cold water. Bring to the boil and simmer for 15 minutes.
2. While the potatoes are cooking, preheat the oven to 200C/400F. Heat the oil in a large frying pan.
3. Add the onions, celery and carrot and cook on medium heat for five minutes until they start to soften.
4. Add the minced lamb and cook until browned - breaking up any pieces as you go.
5. Add in half the salt and pepper, the Worcestershire sauce and stock. Simmer for 5 minutes.
6. By this time, the potatoes should be cooked. Drain the potatoes and mash using a potato ricer.
7. Add the cream, butter and remaining salt and pepper and mix together.
8. Mix the cornflour with two tbsp of cold water and stir into the simmering lamb mixture to thicken the sauce (you may need to add a little more if you like it thicker).
9. Turn off the heat and use a slotted spoon to scoop out the lamb mixture and place into a large baking dish. This should leave most of the gravy behind in the pan.
10. Top the lamb with the mash potatoes, and flatten out with a spoon.
11. Rough up the top of the mash with a fork (so you get nice crispy bits).
12. Place in the oven for 20 minutes until the mashed potato is golden brown.
13. Heat up the gravy, then serve the shepherd’s pie with the gravy and some green veg.
Notes:
Can I make it gluten-free?
Yes! Use gluten-free stock. Also check your Worcestershire sauce brand is gluten-free - then you're good to go.
Any Leftovers?
You can freeze them or, what Chris loves to do is, fry them up in a frying pan until the edges are crispy then eat them in a sandwich. Sounds weird but it actually tastes AMAZING!

    He shallow frys it in a frying pan with a table spoon of oil until its hot throughout and has some crispy edges then has it on a sandwich. He's done this for as long as I've known him, its a sort of ritual whenever I make a shepherds pie or a cottage pie. LOL

    If you dont have cornflour, my mum just used to sprinkle in 2 tablespoons of flour over the minced lamb then add the stock slowly to make a thicker sauce. This is an absolute winner of a recipe, I love shepherd's pie!

    Love this recipe! I added sweetcorn and peas to it to help boost the veggies! Tasted just epic and was great to make as part of a meal prep for about 4-5 days!

    Shepherd's pie,cottage pie,Cumberland pie,love them all,real childhood favourite takes me back to being a small boy and my Nan's shepherd's or cottage pie made from the leftover of a Sunday roast joint,which she minced,definitely one of the best comfort foods.

    I don't think you'll ever get people to change from their family recipe - it is never as good without that nostalgia taste. My family have always caramelised a sweet chutney in ours.

    @@kdotwilly7935 with cottage pie I would use thyme personally. And yes tomato Purée also but cook it out to get rid of the rawness

    We always use left-over roast joint minced with carrots and onions. Add gravy then top with mashed potato with a generous topping of grated cheese before browning under the grill. We had swineherds' pie today.

    Always add mature cheese to the mash and red wine to the meat and allow it to simmer for 45 minutes, before thickening , but each to their own. Love the recipe ideas guys, keep it up

    To this full recipe 120g cheddar, FINELY grated, to the mash, and another 40g on top. And six garlics, and double the salt and pepper.

    I’ve made this 3 times for my family. I’ve never cooked prior to covid-19. We can’t eat beef (dad is Hindu) so I used lamb mince, and I put some curry powder on the uncooked lamb to remove the gamey taste lamb has. It turned out really well! They love it.

    I always sprinkle on lots of breadcrumbs before wacking it in the oven .My old gran use to do that bless her. Gives the mash on top a nice crunch. You virtually cover the mash in it.

    I love that story about your gran, I bet it was delicious! I was challenged once to make a fish pie with a "twist". One of the things I did was crushed up some cheese and onion crisps and sprinkle them on top of the mashed potato for that crunch and everyone loved it.

    As always your videos are fun to watch., many thanks. If I may add one small comment, After i place the meat in the dish I put it in the freezer for 30 minutes. This thickens the sauce, and stops it bleeding up through the mash potatoes when you add them.

    I'm from the north of England where we believe everything is better between 2 slices of bread or wrapped in pastry and if it's wrapped in pastry you can put it between 2 slices of bread.

    Wow! This is so delicious. I cooked the cottage pie version (using beef) for me and my son who is back home from college! It has been cold in the past few days, and the timing was perfect for this pie. I used half the ingredients, to make a smaller batch and it turned out great! Thank you Nicky.     For the British folk who are unsure floury potatoes in the supermarket are Maris Pipers which is what is most commonly available

    Made a slight adaptation to the constituent parts but maintained the methodology..... called it 'Coward's Pie'...... Yes !..... because I used chicken mince. Love the straight in and no BS....many thanks. Regards from sunny Spain.

    Glad to see she has clearly stated the difference between shepherd's pie and cottage pie. Here in the States shepherd's pie is mostly made incorrectly with ground beef. Damn the Colonials!

    When making Celery, onions and Carrots, I use a cheese grater then chop of any awkward bits because I am lazy and like to do things stupidly quick lol. Saw frozen C C & O in tescos other day, might just buy that this week lol
