Growing Garlic - Planting Harvesting Curing & Braiding

We plant lots of garlic in Portugal. It's one of the easiest foods to grow. From start to finish: planting, Harvesting, curing, drying, braiding and selection for growing the following year.
Recipes down below.
Garlic is one of the least demanding vegetables to grow and a great staple in the kitchen.
It's the first vegetable we where we achieved 100% self sufficiency on our homestead in Portugal.
Garlic Confit Recipe
About 6 bulbs garlic (we used the little cloves left over from planting)
2 or 3 sprigs of Thyme or Rosemary
2 pieces of lemon peel from 1 lemon,
1 tablespoon black peppercorns
Enough olive oil to cover the cloves
Preheat the oven to 130C/110C fan ( 230 / 260F fan)
Separate all the cloves and peel.
Place the garlic cloves, a generous amount of salt (1 teaspoon) and the thyme or rosemary in an ovenproof dish and cover with the olive oil.
Make sure the garlic is fully submerged in the olive oil so it does not burn.
Roast for 2 hours.
The oil will bubble gently while it cooks.
Allow to cool, then store the garlic with the oil in an airtight container or jar in the fridge.
It will keep for at least a month.
How to use
We used some on the toasted bread shown on the table to make a delicious garlic bread.
Another evening we swirled some into creamy mashed potato, dotted the potatoes with butter, grated parmesan on top and grilled it for 10 minutes until golden brown.
Thanks for watching.

I have ben growing garlic for 25 years, I never let the scapes get to big always cut them off when they have grown about 6 inches above the last set of green leaves, this way all the energy of the still growing plant is focused on the bulbs, the scapes are always tender and delicious to eat, if you let them grow for to long they can become tough and a little bitter, but when cut young they are delicious in stir fries or salads, I am in Australia so your season is the opposite to ours, but garlic is garlic where ever it is grown, in my opinion one of the most fascinating alliums to grow.

@@zedacruja681 no you just cut the flower stalk or scape as it is called off, the plant is concentrating all of its energy into growing the flower or scape as it is called, the plant then sends all of its energy to the garlic bulb so you end up with a bigger bulb.

I actually managed to grow decent sized garlic last year, and kept enough to grow again this year. Other times, failures.
