4 teaspoons salt, divided
2 1/2 teaspoons freshly ground black pepper, divided
1/2 cup chopped fresh parsley
8 sprigs fresh thyme, leaves only
2 leaves fresh sage, chopped
2 small sprigs fresh rosemary, chopped
2 cloves garlic, minced
1 shallot, minced
3 tablespoons olive oil, divided
2 tablespoons balsamic vinegar
2 teaspoons Dijon mustard
2 teaspoons soy sauce

I’m so glad to finally see someone using the spine of their knife to scrape the board. It drives me insane seeing all these people using the blade as a scraper.

There's a new idea. Let the herbs infuse steaks during the 'rest'. Will give this a try.
I'm not one to really like a sauce on a perfectly grilled ribeye, but that looked like a great compliment to the steaks. Will have to try.
