Follow this recipe to make the most delicious Green Chicken Chili Soup. This recipe is a favorite at our household and the perfect soup for a cold fall or winter day.
Ingredients:
1 large yellow onion
2 poblano peppers
1 jalapeno pepper
5 tomatillos
5 cloves of garlic
1 inch piece of ginger
handful of fresh cilantro (more for serving)
4 cups of chicken broth
1 teaspoon of cumin powder
1 teaspoon of coriander
1/2 teaspoon of red chili powder
2 teaspoons of dried oregano
2 chicken breasts (about 1.5 LB)
Salt and fresh ground black pepper
smoked paprika
olive oil
1 cup of frozen or fresh corn
1 or 2 cans of white beans
1 avocado
1/2 cup of sour cream (more for serving)
Fresh lime juice
Toppings:
Sour cream
Mexican shredded cheese
fresh cilantro
lime
crispy tortillas or jalapenos
