Greek traditional giouvetsi/ veal orzo casserole/ το πιο ζουμερό γιουβέτσι με μοσχάρι

Greek traditional giouvetsi, veal orzo casserole! One of my favorite and comforting dishes, also is 100% kids approved, my kids and most of the kids I know they absolutely love this dish! Is a family recipe filled with so many memories from my childhood when my grandma and my mom were cooking this and family was gathering on Sundays! • ingredients:
- 2 lb veal or beef for stew
- 1 big diced onion
- 1 diced pepper
- 3-4 medium sized diced tomatoes
- salt
- pepper
- beef bouillon ( optional)
- 8 cups of water
- 2 cups orzo
- 1/3 of a cup olive oil
- 1 cup ice cubes
• instructions:
- add into a pot or casserole the oil and let preheat
- then add the meat, the onion & the pepper and sauté for about 10-15 mins
- then add the diced tomatoes and let cook for about 10’ more mins
- add the water, cover and let cook for about 1 hour in medium heat
- uncover, add the orzo and keep cooking in medium heat by stirring constantly to prevent sticking on the bottom of the pot for about 10-15 mins
- cook the orzo aldente and make sure it has semi soup consistency ( not too dry because it will thicken even more as it sits) at the end of cooking turn off the heat and add 1 cup ice cubes to stop cooking process immediately!
- serve hot with freshly grated Kefalograviera or any cheese of your choice!

    Hmmmm! How would this be if made with risotto or wild rice and Marmarabirlik black olives?
