    Dont be so defensive. Most Indian food does not have fixed recipes like the west. Every region has its own cuisine. Within every region each community has its own cuisine - eg vegetarian and non vegetarian versions of the same dish. And then to top it off each family has its own version. We do have ratio based recipes ie 1 part of A to 1.5 parts of B and so on. But we do not measure ingredients as minutely as you do in the west. Cooking is an art and a science. While the west likes a more "scientific " approach in India cooking is an art - you are allowed to be creative as you want. So ingredients are not measured instead we follow rule of thumb. In fact a good cook is someone who has the ability to create fantastic food with whats available rather than specifically bought for a particular dish.​@@leapintothewild

    ​​@@vikramkrishnan6414exactly we have to use lesser water in during rainy days and more water during dry summers, as water evaporates faster. we go for the batter texture as our goal instead of measuring everything. with some ingredients like lauki we don't need to add water at all because they release a lot of water from within just enough to make that desirable batter consistency.

    In india we use our hand to frop the batter higgledy piggledly. We also use a little rice flour to the batter for crispness. Then you can avoid the baking powder. When monsoon comes we make pakodas.

    ​ @miloblackmetalhate Meetha soda is similar to baking powder not the same. Baking powder has an acid added to it along side sodium bicarbonate. If you use meetha soda, you need to add, vinegar, or curd/yogurt or buttermilk etc to get the same effect.

    Tip: u can put the pakoras in curry!! N it's actually called curry in India too! The gravy is made by mixing Gram flour (besan in India) n sour yogurt add water accordingly with spices n done! Oh add pakoras too

    Pakoras are good to snack on 😊 followed by a cup of masala chai or a ginger chai In India, pakoras are a favorite during the monsoon season 😊 dunno why but you have to experience the heavenly aroma and ambience of rain while you cocoon yourself in the coziness of your room

    Tip for Chef , once you have your hand in the veggie mixture you don’t wash up you mix the batter manually and it will be perfect consistency without adding any water at all . Then you can wash up and fry by spooning the batter as you did , the best way however is to grab the batter manually and add I to the hot oil. The process is just faster.

    Last year i went vegetarian due to health reason, indian food made my life so much easier, especially and indian dish called pakal paneer( basically a spinach paste with spices) and this pakora can go along with anything, its a side dish, snack or even main dsh.

    The biggest difference between Western cooking and Indian cooking is precisely measuring vs eyeballing. There is no precise measuring in the Indian kitchen - every time you get a different flavor and that adds to the diversity that we so love. Diversity also leads to new ideas that can evolve into better tasting recipes. These pakodas look great though. When it rains, all you need are some pakodas, masala chai and good company to sit alongside on the balcony while you watch the rain drops and munch on. Also some coriander chutney to dip the pakodas in really elevates the experience.

    Eggplants butternut squash cauliflower cabbage, you name a veggie and you can just add them! Tastes as good as anything. 20 minutes and you can feed 15 uninvited guests and make them happy 😅 My mom adds a few spoons of rice flour or corn flour

    Get an Indian to share the inside tips. Use rice flour instead of baking soda to make it crispy and can also add cabbage instead of potato. Pakoras goes well with Mint and corriander chutney and a piping hot cup of Chai. Best time to have Pakoras is when it's raining.

    in india atleast in north , pakoras are made up of one vegetable at a time like : potato pakora , chilli/mirchi pakora , onion pakora , spinach pakora but yeah you could make them by initially forming a salad and then multi veggie pakoras

    Generally you dont need to add additional water to the batter as you initially massage the vegetables enough moisture is released to wet the baisan or basen to make the batter but if you still think its too dry a few drops of water can be added. Dont just add all the water at once just add what is needed.

    One more tip...first fry them for one minute or more on low flame until pakoras get light brown...then bring out in trey...fry second and third batch same....after that....high your gas flame and fry again all until they look dark brown.....it will give best crispy ness and or important when you bring them out in high flame...the less oil remains in pakoras so they not seem too oily.....one thing you should remeber be careful your pakoras not have burn in high flame you can adjust flame in such condition.... professional knows this trick to make things cryspy...

    Couple of changes . Add two tablespoons of Rice flour Also no need to add water if you let the onions rest for sometime it'll release enough water. Add more chillies at least there should be two of them . Add chopped curry leaves Add one table spoon of hot oil into the mixture . It makes it more crispier.

    Some people are saying "so many ingredients are hard to find 😢" but these are even easy to find here in Denver and we don't have a huge Indian community 🤷‍♂️ and there're also easy-to-find online sources for fenugreek or whatever
