Both our families, love spaghetti. Like a lot! That's why this garlic basil homemade spaghetti sauce canning recipe and tutorial is so great. Spaghetti is not only delicious but so easy to throw together when you need a fast dinner, especially if you have the homemade spaghetti sauce canned already.
This canning and filming season we have 4 different homemade spaghetti sauce recipes that each have their own distinct flavors. This is one of my favorites as the garlic and basil make such a great combination with our lovely tomatoes. This tastes fabulous with meatballs, chicken, or just on noodles alone.

    I've been been a chef for a long, long time and one thing I've always found amazing is how no matter what part of the world you're talking about, they typically mix 6 or 7 different ingredients and call it thousands of different things lol.

    @@WisdomPreserved man, to be perfectly honest, I just consider myself a chef lol period. I don't tag myself with variations but if i did then I'd guess I'd say I've been an executive chef for the past 7 years, before that I was a sous chef for 4 years and before that I was bottom of the barrel lol. I have a bachelor's degree in culinary arts, I own 3 restaurants, but a chef is a chef is a chef. You got it or you don't, to hell with the profound names lol.

    Until they are nice and soft. On my stove it is around 30 minutes.

    I typically pressure can so I do not need to add lemon juice or citric acid. Using a water bath canner you could probably do what the old people did and that is wrap the jars in a heavy blanket and let them take a couple days to cool.

    I actually kind of like the added tang of the lemon juice but you are right, if you wanted to omit it you could pressure can.

    We do both on an as needed basis. Some people do it every time on every jar and their is certainly nothing wrong with that. I recommend doing what you feel comfortable with.

    My sauce I make with my jarred tomatoes has 3 different meats, from everything I am watching, it says meat sauce needs to be processed in a pressure canning method. I use burger , Itailian sausage and pork country ribs, slow cooked for 6 to 8 hrs, do I need a pressure canner because of the meats, from the videos I am watching, it says I do, your sauce was meatless, so I think it worked well for you.

    You would need to pressure can it for safety. It would need 75 minutes for pints or 90 minutes for quarts. The pressure depends on your elevation. I'm at 1200 feet so I would have it at 11 pounds of pressure.

    Naomi, don't let that deter you! I don't have any of the equipment either. Do you have a hot water bath canner? I freeze my tomatoes and when I have enough I put them in an electric roaster. Mash them with a potato masher as they are cooking down. Then add your spices and use either a blender or a stick blender to blend up the seeds and skins. It is very easy. I make Catsup, Tomato juice and pasta sauce. Living Traditions Homestead or That 1800's homestead shows how to do it. Good luck.
