I’m having a high anxiety day at work currently. The nausea gets pretty bad the worse my nerves get. I always come to your channel for comfort and I just saw this video! Yes, ive been doing this for my boyfriend since we met. I even sneak dehydrated veggie powder into anything I bake 😅

My hubby hates cooked carrots...he can taste them in any dish I try to sneak them into. This one might be complicated enough taste wise to sneak them in....LOL

Imho, keep an eye out for a Nesco roaster - they are very well made and heat very evenly. I bought mine on fb marketplace but I also come across them sometimes at Goodwill. I orig bought a cheaper brand which scorched everything I put in it - so maddening!! I'm curious what others experiences have been with other brands.
I just finished canning this and wowsers! It is the most delicious sauce I've ever made. I even threw beets in there. My kids said it tasted like the butternut sauce from trader Joe's. I'll take that compliment bc that stuff is yummy! Thank you for such neat ideas!

Thanks for sharing this with us. I made my first small batch today and it is delicious. I did decide to quickly strain it before I canned it and the juice that drained made a fantastic v8 type juice. Hope to do a larger batch next time and can the juice too.
I have been on the lookout for a roaster since starting to follow you, I didn't even know it was a thing to have. I lucked out and found a like new one for $13 at the thrift store! I can't wait to use it to try some of the things you use yours for plus discover other uses for it. 🥳
I will definitely do this even if I have to buy a few veggies to come up with enough. I agree with you on adding th tomato paste. I hate cooking things down so much when there is an easy way to do it and get a little more actual food.

Hi there fellow Michigander! If you are into dehydrating, tomato powder from your tomatoes work to thicken your sauce too. I love dehydrated eggplant in it as well. Love watching your channel!
I’ve had pumpkin pasta sauce before that was truly delicious. I often use sweet potatoes instead of pumpkin in recipes. I’m now thinking about using sweet potatoes and whatever veggies I have available to make a sauce. Thanks for the inspiration.

I'm doing the zucchini salsa right now in my roaster pan! And I'm using all kinds of different tomatoes too. I have cherokees, super sauce paste tomatoes, ponderosa pinks, cherries, home grown onions, jalapenos, lemons, zucchini, mmmm going to be soooooo good!
Some day I am going to have that lovely confidence about what I feel safe adapting and "just putting together" and I am, thanks to you Rachel because I've seen you talk about it and how wonderful it feels to go over that threshhold, really looking forward to it. Baby steps this week with my pressure canner -- I have now canned up 1 batch of chicken bone broth, 1 batch of chicken breasts, and a large load of green beans. That feels good, too!

Harvested what feels like 100s of pounds of tomatoes. What a brilliant way to cook it (doing this forever now!) First 5 gallon bucket of tomatoes in the roaster for pizza sauce. Thank you for sharing. My husband and I really enjoy what you and Todd share. The fact that we work a 9 to 5 as well makes me hopefully that we can figure this out as well as you and Todd. Wish we were closer.

This looks wonderful Rachel! And very nutritious too. I do something like this and make a end of the garden vegetable soup without the tomatoes. I use the little tiny potatoes, carrots, green beans, onions, zucchini etc, cook them slow with as little chicken broth as possible, season, add milk and a pat of butter. Yummy! I'm going to be blessed with an abundance of tomatoes this year so this recipe will definitely be helpful. Thank you for bringing it to us! It will be on the shelf for this winter!
That beefsteak was gorgeous!! My grandma loved those and they were huge!! The saying is we have to eat so much dirt before we die anyway! Lol.
Rachel, you made my night trying to pronounce Worcestershire sauce! I cannot pronounce it well either and I seem to do just the same as you did there when i say it out loud. I cannot wait to make my next sauce to can because I love all the added veggies in there. SO great!!

I just made the Squash Zucchini marmalade from "Whipporwill Holler '. It is so delicious! It is right up there with the "Zucchini Bread Jam". I bet your sauce tastes great. I love stewed tomatoes.
I want to do this! I don't have an electric oven so I do small batch sauce, but this inspired me to try the mixed veg and do it the way I usually make tomato sauce by pan roasting them with garlic and seasoning and herbs and a little olive oil and balsamic. Once it's roasted I whizz it in the blender and then I freeze it (because I also don't have a pressure canner). This mixed veg sauce is genius Rachel! I am going to throw all the veg on the pan with the tomatoes - it will be really good. Thank you so much!!

Two videos in a row that I watched from you using that roaster. Mine has been sitting in our seacan for a couple years since I quit cooking my Christmas turkey in it...back out it comes! Thanks so much...I tried doing tomato based sauces when I was a young mom and I'm going to give it a try now again(I'm in my mid fifties now). I never thought of cooking them down that long...ours was always too runny. Oh my, where was the internet when I was the young mom...lol. I just became a grandma for the first time last year and I'm excited to keep the tradition going of teaching our grandchildren cooking and canning skills...Hubby's 85 year old Mom (Baba) just taught my daughter her recipe for pickling beets...and here I never thought I could talk my daughter in to canning. She's witnessing the break down of Baba's body(while is mind is still sharp as a pin) , which breaks all our hearts. Even now, Baba is making sure her youngest grandaughter has all the skills she can teach her to cook and can. The love of women, there's nothing better.

Oven roasted tomatoes and zucchini from my garden along with garlic, onion and a red bell pepper. Some olive oil, salt and pepper. Pureed it up. So yummy. I just freeze it and add it to chili, soups and sauce.
I just wanna say thank you. You are such an inspiration. I made this today and made 12. Qrts. I've made the pineapple zuchinni, zuchinni relish, peach salsa. It all tastes amazing. I plan on making many more of the items you've posted. Heck I think I'm going to restart my kombucha all because I watched your videos as well. Lol. Everytime I layed down to rest my back and feet I'd watch one of your videos and get inspired all over again. Couldn't wait to jump back up and do more. Lady you are the bomb. Thank you.

I do a basic, Italian Grandma pure tomato sauce and then I do an everyone in the pot sauce! It's so much fun seeing how the second one turns out, because it all depends on what you put in it! Last year, I had a lot of yellow peppers and it was delicious! Fun to see this!

My first time growing yellow bell peppers. They take forever to turn yellow, same with red Snackabelles.
This is my favorite sauce! I have made it 2 years now, this will be my 3rd year. It's so easy. I put it on and I don't have to stand over it all day. Even my pickiest eater, loves it.
I am a roaster girl too. Anything that needs to be cooked slow, low, and long. Apple butter, pear butter, tomato sauce, chicken stock, and beef stock - all those wonderful things =0) I really appreciate how much volume you can get into the roaster.

My husband grew up with a garden, and his mom always made "chunky" pasta sauce. She didn't puree the veggies, just chopped everything up and tossed it into the tomato sauce. I don't know that she ever used carrots or celery, though. Or peas! But this garden sauce for canning is a great idea, and I'll be doing this!
