    I liked your efforts. Few grievances 1. Use of tata salt is injurious to health. Use only sendha namak and black salt. 2. We should use only green chilli in place of Red chill as per ayurveda. For more clarity you may check on youtube. 1. Rajiv dixit salt 2. Nityananda yogi supertonic khatti kanji I hope you take it as positive feedback. Also please do not promote brands like bisleri. Again you may search it on youtube.

    vikram sindhu I agree with you.... especially in using bisleri water. Soo much precious water is not only wasted to make 1 litre bottle of water but also it lacks minerals that natural drinking water gives us

    I am actually very surprised. Kanji is very similar to Turnip Juice, a fermented beverage produced in Turkey. The Turkish word for fermented turnip juice is "Şalgam Suyu". You can watch many different recipe versions when you search for it on youtube. Purple carrots are also added to Turnip Juice. In some versions, beet root is also added to this recipe. Traditionally it is still produced at home. As a commercial product, there are two different versions in the markets. In addition, the flavor of "Şalgam Suyu" is very compatible with the flavor of kebab and "rakı".

    Thank you, I have been looking for this recipe for a long time. Just wanted to ask, what is the shelf life after 5 days of marinating? Should this be moved to the fridge? Sorry, I just remember drinking this as a child at my friends place. It has left a lasting impression ever since. I would like to thank you again to bring back great memories of my childhood.

    chef, I have made kanji four times so far. Every time everything was fine, but when I went to prepare the fifth batch, after four days I saw that the fungus had fallen off, the first two days I poked the lid of the jar a little (with a clean dry chop stick). Only on the third day the lid was not opened. Now, can Kanji with fungus be eaten or should I throw it away? Please let me know. I know, I bother you a lot, ask a lot of questions. Please forgive me.
