    Try this. You should add additionally: garlic, black pepper and bay leafs. To start the fermentation you should add a tbs of kvas from fermented sauerkraut. You should keep this in the jar for 6-7 days. After that you can consume the juice. This is an advice form an Eastern European. Try it. You will see the difference. Additionally: for 1kg beets use app 1 liter of salty water (1 tbs of salt for 1 liter of water).

    Md ji nice information, but u can make it without boiling it, as Kanji of Black Carrot is made, that is particularly after winter in Jan -feb whole method is, same, except boiling it, just cut it in slices add drinking water &if possible put in sunlight for few days to get it fermented, more over if someone makin kanji of black carrot of say 1 kg can add 2 beetroots in the same water same spices, We in North India drink Black carrot + Beetroots kanji , so try it also

    Super excited 🎉 I used your recipe!! My beets are sitting in a glass jar with mustard seeds, black pepper, salt and water. Years ago at a farmers market a family sold homemade fermented beet juice and freshly cooked pita chips. They sold lots of other foods too but I only remember the heavenly taste of fermented beets and crunchy addictive pita chips 😂😂 I pray mine ferments as lovely as theirs 🙏🏻

    I am new to this am totally scared to do because I am worried I may not do it properly and it will result in food poisoning. My mom or grandnever fermented food, so I am new to it. The only thing I can make is curd. Is there a way that I can safely and confidently do some fermentation, like an easy one to start. Also how do I confirm it’s safe..because I live in the US and it’s starting to get cold..we already have temperatures 18 to 20 c

    Quick solution, just clean and cut beetroot, cook, and allow it to cool down after that put it into a jar add some natural vinegar, and close the cap. The next day it is ready to serve.

    I've tried fermenting beets, it always turns into a kind of wine. There is too much sugar in beets so the yeast takes over before the lacto bacteria gets a chance

    Peel the beet to get rid of yeast on skin. Use boiled and cooled water. Keep on counter top in cool climate. In summer heat, keep in a cool area such as in the pantry or kitchen cupboard.

    Madam, I have made kanji four times so far. Every time everything was fine, but when I went to prepare the fifth batch, after four days I saw that the fungus had fallen off, the first two days I poked the lid of the jar a little (with a clean dry chop stick).     This is all a bit of a faff. Just chop the beetroot, teaspoon of salt, chopped fresh garlic, pour in warm water and close the jar, leave for a week. Sorted.

    Beet root has oxalic acid you will get kidney stones if you drink daily. If it is fermented with oxlates eating bacteria "oxalobacter" then its fine.

    Neither in Jamaica 🇯🇲. They only bring the roots to the market, but you'll only use the roots for this recipe.

    Who said that?? In india beetroot is available with leaves. Where do you live? In North India it's easily available

    On the chance that there is a food co-op near you they would have the spices in bulk,where shoppers can take only what they need and without the cost of jars. If you would like, I will ask at my co-op where they buy their spices.
