Frittata with Parmigiano, Prosciutto and Sage - Recipe

Frittatas are simple, quick, and easy! A great one-pan meal that allows you to incorporate an array of ingredients or even leftovers. Enjoy this yummy meal for breakfast, lunch, or dinner.
Today's frittata incorporated some leftover prosciutto from last night's charcuterie board.
Ingredients:
5 whole eggs
1/4 cup Parmigiano cheese, grated
3 slices prosciutto, sliced
A few slices of leftover sausage (optional)
3 sage leaves, chopped
1 onion, diced
1 tablespoon olive oil
Arugula to serve (optional)
salt/pepper to taste
Method:
1. Preheat oven to 350 F.
2. Heat saute pan, add olive oil, saute onion for 3 minutes or until onion is translucent.
3. Add prosciutto and sausage and saute for 2 minutes.
4. In a bowl, whisk eggs, add Parmigiano, pinch of salt and pepper. Whisk to combine.
5. Add egg mixture to saute pan. Gently stir once. Let set for 1 minute. Add in sage.
6. Bake in preheated oven at 350 F for 5 minutes or until frittata is set.
7. Serve hot, or cold garnished with arugula.
